Every piece of meat that reaches your plate has passed through a mandatory checkpoint – the postmortem examination. Conducted by trained veterinary inspectors immediately after slaughter and evisceration, this systematic process evaluates each carcass for disease, contamination, and abnormalities. According to the MSD Veterinary Manual, carcasses found to be sound and free from adulteration receive a mark of inspection, while those found diseased or contaminated are condemned. What makes this process especially important is that the inspection steps are not identical for every animal – cattle, calves, pigs, sheep, and goats each follow a specific protocol tailored to their anatomy, common diseases, and slaughter method.

Why species-specific procedures matter

The anatomy of a cow differs significantly from that of a pig or a sheep, and so do the diseases each species commonly carries. The FAO’s Manual on Meat Inspection for Developing Countries emphasizes that postmortem inspection must provide the scientific evaluation of pathological lesions relevant to the wholesomeness of meat, using techniques of viewing, incision, palpation, and olfaction. Inspectors are also trained to distinguish between localized and generalized conditions – a localized lesion may require trimming only the affected part, while a generalized condition typically demands full carcass condemnation. Understanding these distinctions requires species-specific knowledge, which is why inspection routines differ for each animal.

Postmortem examination of cattle

Cattle carcass inspection is among the most detailed and follows a structured three-part sequence: head, viscera, and carcass.

Head inspection

The inspector observes the external surfaces and eyes of the head, then incises and visually examines four key lymph nodes – the mandibular, parotid, medial retropharyngeal, and lateral retropharyngeal lymph nodes. The lateral and medial masticatory (jaw) muscles are also examined, along with careful palpation of the tongue. In cattle older than six weeks, the muscles of mastication are additionally incised to check for Cysticercus bovis (beef tapeworm cysts), which can be invisible without a cut. The esophagus is separated from its attachment to the trachea and examined.

Viscera inspection

The abdominal viscera and mesenteric lymph nodes are examined. The ruminoreticular junction (where the rumen meets the reticulum) is palpated, and the esophagus and spleen are checked. For the thoracic cavity, inspectors incise and examine the cranial, middle, and caudal mediastinal lymph nodes as well as both bronchial lymph nodes. The MSD Veterinary Manual outlines that the lungs are examined and palpated on both costal and ventral surfaces, while the heart is incised from base to apex through the interventricular septum, with both inner and outer surfaces examined. The liver receives a thorough evaluation: hepatic lymph nodes are incised, the bile duct is opened in both directions, and both dorsal and ventral surfaces are examined along with the renal impression area.

Carcass inspection

Both internal and external carcass surfaces are examined. The inspector palpates the internal iliac and superficial inguinal (or supramammary, in cows) lymph nodes, and both the diaphragm and kidneys are examined and palpated. Research published in PubMed confirms that routine abattoir inspection of cattle specifically includes palpation and incision of tracheobronchial, mediastinal, and prescapular lymph nodes to detect bovine tuberculosis, which remains a significant public health concern given its zoonotic potential.

Postmortem examination of calves (veal)

The inspection of veal calves is a simplified version of adult cattle inspection, reflecting their younger age and reduced disease exposure. For the head, only the external surfaces are observed and the medial retropharyngeal lymph nodes are incised and examined. Viscera inspection includes palpation of the bronchial and mediastinal lymph nodes, examination of the heart and lungs, inspection of the spleen, and examination of the liver’s dorsal and ventral surfaces with palpation of the hepatic lymph nodes. The abdominal viscera are also examined. For the carcass, the exposed inner and outer surfaces are checked, and the kidneys and internal iliac lymph nodes are palpated. Because calves up to six weeks of age are less likely to have developed systemic infections, the tongue is only visually examined rather than palpated, and the masticatory muscle incisions for cysticercosis are not required at this age.

Postmortem examination of sheep and goats

Sheep and goat inspection combines head, carcass, and viscera examination but follows a slightly different flow. The head and carcass are assessed together – inspectors examine body cavities and outer surfaces, palpate the back and sides of the carcass, and examine the head, neck, and shoulders. The prescapular, femoral, popliteal, and superficial inguinal (or supramammary) lymph nodes are all palpated. Kidneys are examined and palpated.

Species-specific concern: caseous lymphadenitis

According to the MSD Veterinary Manual, lymph nodes in sheep and goats are incised when necessary to exclude caseous lymphadenitis – a bacterial infection caused by Corynebacterium pseudotuberculosis that produces characteristic green, cheese-like pus inside affected nodes. This condition is particularly prevalent in small ruminants and can lead to partial or full condemnation depending on how widespread the infection is.

Viscera inspection

The abdominal viscera, esophagus, mesenteric lymph nodes, omental fat, and spleen are all examined. The bile duct and gallbladder contents are checked, followed by examination of the liver’s surfaces and palpation of the bronchial and mediastinal lymph nodes. The heart is both examined and palpated. A notable focus during sheep and goat liver inspection is detecting liver flukes (Fasciola hepatica), which are common in animals grazed on wet pastures. The lungs are also checked for lungworms, which frequently affect small ruminants in humid environments.

Postmortem examination of pigs

Pig inspection has several unique requirements that set it apart from ruminant inspection, driven by the specific diseases that swine are prone to carrying.

Head inspection

The inspector examines the head and all cut surfaces – including the eyes, fat, cheek muscles, and other tissues. The mandibular (submaxillary) lymph nodes on both left and right sides are incised and examined. USDA FSIS guidance identifies the mandibular, mesenteric, and mediastinal lymph nodes as the primary sites for detecting tuberculosis in swine. Any tuberculosis found during head inspection mandates condemnation of the head and retention of the carcass for veterinary disposition.

Viscera inspection

The mesenteric lymph nodes and spleen are examined and palpated. Portal lymph nodes are palpated. The liver’s dorsal and ventral surfaces are examined, with bile ducts incised only when necessary (unlike in cattle, this is not a routine step). Both bronchial and mediastinal lymph nodes on the left and right sides are palpated. The lungs are examined and palpated on both surfaces, and the heart is examined and palpated.

Trichinella screening

A critical and pig-exclusive step in postmortem inspection is testing for Trichinella spiralis, a parasitic roundworm that causes trichinosis in humans who consume undercooked infected pork. As noted in Veterian Key, muscle samples from the root of the diaphragm – specifically the crura diaphragmatis, where it attaches to the vertebral column – are collected and examined for Trichinella infection. Because these cysts are not visible to the naked eye, microscopic examination is required. In many countries, this testing is a regulatory requirement before pork can be approved for consumption.

Carcass inspection

Both external and internal carcass surfaces are examined, and any suspected abnormalities are incised. The kidneys are examined and palpated. Inspectors also pay attention to the skin for signs of diseases such as erysipelas or swine fever, and check for tail-biting injuries that could indicate welfare or health issues.

The role of lymph nodes across all species

Regardless of the animal species, lymph node examination is central to every postmortem inspection. Lymph nodes act as the body’s biological filters, trapping bacteria, viruses, and foreign materials. USDA FSIS training materials explain that when disease organisms or toxins begin to spread through the body, lymph nodes are among the first tissues to show visible changes – making them a reliable early signal that something is wrong. Healthy lymph nodes are small, soft, and pale. Enlarged, hardened, hemorrhagic, or discolored lymph nodes prompt further examination, incision, and in some cases laboratory analysis. The specific lymph nodes examined vary by species because the diseases most likely to affect each animal tend to concentrate in particular drainage regions of the body.

Carcass outcome: passed, condemned, or conditionally approved

After completing the full postmortem examination, the inspector arrives at a final judgment. The FAO guidelines outline three general outcomes: the carcass is passed as fit for human consumption; a portion is trimmed and condemned while the rest is passed; or the entire carcass is condemned and must be safely disposed of. Full condemnation is required when a generalized disease is detected – such as widespread tuberculosis, septicemia, or systemic parasitic infection. Localized conditions, such as a single abscess or an isolated liver fluke lesion, may only require removal of the affected part. In some circumstances, such as when heat treatment would render the product safe, a carcass may be passed for cooking only and must be processed under controlled conditions before it can enter the food chain. The Canadian Food Inspection Agency further specifies that special enhanced procedures may be triggered when conditions like bovine cysticercosis or tuberculosis are suspected, requiring additional incisions and laboratory sample submission before a final disposition is made.

Postmortem examination is not a single, uniform procedure – it is a carefully differentiated set of protocols designed around the biology and disease risks of each animal species. From the masticatory muscle incisions in cattle to Trichinella screening in pigs and caseous lymphadenitis checks in sheep and goats, every step serves a clear public health purpose: ensuring that only wholesome, disease-free meat reaches the consumer.
