Every piece of meat that reaches a consumer’s plate has gone through a carefully controlled sequence of operations at the abattoir – and dressing is arguably the most critical part of that sequence. Dressing refers to all the steps carried out on a carcass after stunning and bleeding: removing the hide or hair, extracting the internal organs, washing the carcass, and preparing it for postmortem inspection. The exact method differs from one species to the next – cattle and buffalo go through dehiding, while pigs require scalding and dehairing. Getting these steps right is not optional; it directly determines the hygiene, safety, and shelf life of the final meat product.

What happens before dressing begins
Dressing begins the moment adequate bleeding is confirmed. The most hygienic approach is to shackle the animal immediately after stunning, hoist it onto a moving rail, and begin sticking while it is being hoisted – this minimises the delay between stunning and the start of dressing. Bleeding continues until blood flow becomes negligible, and dressing should start without further delay at that point.
Proper pre-slaughter management also plays a role here. Fasting animals for 12-24 hours before slaughter reduces the volume of gut contents, which in turn lowers the risk of carcass contamination during evisceration. Animals should also be kept calm and clean – stress before slaughter depletes muscle glycogen, which can result in quality defects such as pale, soft, exudative (PSE) meat in pigs or dark, firm, and dry (DFD) meat in cattle.
Dressing cattle and buffalo
Cattle and buffalo are the largest animals routinely processed in abattoirs, and their dressing follows a well-defined sequence. Despite some morphological differences, the slaughter steps, machinery, and carcass characteristics of buffalo are largely similar to those of cattle, so the same general procedure applies to both.
Dehiding
Dehiding is the removal of the hide (skin) from the carcass and is typically the first major dressing step for cattle and buffalo. The process begins with flaying the head – an incision is made from the poll to the muzzle, then the head is detached at the occipital joint and hung separately on a hook. The legs are then skinned and removed at the carpal (foreleg) and tarsal (hind leg) joints.
From there, workers proceed to the brisket and flanks, systematically peeling the hide away using a combination of precise knife work and, in modern facilities, mechanical hide pullers that remove the hide more uniformly than manual methods. A critical hygiene rule throughout this step: the outer side of the hide must never contact the skinned meat surface, and operators must not touch the meat surface with the hand that held the hide – cross-contamination at this stage is one of the most common causes of bacterial load on beef carcasses.
Evisceration
Once dehiding is complete, the carcass is opened for evisceration – the removal of all visceral (internal) organs. A mid-ventral incision is made from the pubic symphysis to the sternum, carefully avoiding puncture of the digestive tract. The rectal end of the intestine (bung) and the cut end of the oesophagus are tied off first, then the paunch (intestines and stomach) is removed, followed by the pluck – which in cattle and buffalo includes the larynx, trachea, lungs, heart, and liver collectively.
The thoracic cavity is then opened by a mid-ventral incision from the sternum to the midpoint of the neck, and the diaphragm and thoracic organs are removed. Edible organs such as the heart, liver, and kidneys are set aside for separate inspection and human consumption. Accidental puncture of the stomach or intestines during this stage is a serious contamination risk – feces during evisceration and hides are identified as the major sources of carcass contamination in cattle slaughterhouses.
Splitting and washing
After evisceration, the cattle carcass is split down the backbone using a meat saw, dividing it into two equal halves for easier handling and chilling. The carcass is then washed by spraying with clean potable water under pressure. The primary purpose of carcass washing is to remove visible soiling and bloodstains – it is not a substitute for good hygienic practices during dressing, since hosing can spread bacteria across the surface rather than reduce total numbers. Soiled carcasses should be sprayed immediately after dressing, before any contaminating material dries on the surface.
Dressing sheep and goats
Sheep and goats are smaller ruminants and their dressing procedure is broadly similar to that of cattle, but with some important differences in technique and final presentation.
Skinning (flaying)
Unlike cattle, sheep are not dehided using mechanical pullers in most operations. Sheep pelts are often removed by hand in a process called “fisting”, which involves using the fist to separate the pelt from the underlying muscle by blunt force rather than cutting. This technique helps preserve wool quality and reduces the risk of knife cuts on the meat surface. Goats, which have shorter hair and less developed fleece, go through a similar skinning process but with less complexity.
Evisceration
Carcass presentation and washing
One of the most distinctive aspects of sheep and goat processing is that these carcasses are generally not split and are sold whole. The smaller size makes them manageable without halving, and whole carcasses are preferred in many markets – especially for religious ceremonies and traditional cooking methods. The carcass is washed by spraying potable water over the surface and inside the thoracic and abdominal cavity to remove any blood or contamination before postmortem inspection.
Dressing pigs
Pig dressing stands apart from all the species discussed above because the skin is not removed. Pig skin has significant culinary and commercial value – it contributes to bacon rind, sausage casings, and various pork products. Because of this, the entire first stage of pig dressing follows a completely different path.
Scalding
After sticking and bleeding, the pig carcass is transferred to a scald tank. The carcass is scalded for approximately five minutes at 60ยฐC to loosen the hair follicles before being moved to a scraping table. The temperature must be carefully controlled – water that is too hot can cause hair-setting (where hairs become fixed in the skin), while water that is too cold will fail to adequately loosen them.
Dehairing and singeing
After scalding, hair and bristles are removed either by a mechanical dehairing machine (scraper) or manually using a blunt knife, working in the direction of the hair follicles. Not all fine hairs are removed by scraping alone, so the skin surface is then exposed to a blow lamp or torch – a process called singeing – which chars the remaining fine hairs. The charred residue is then removed by shaving with a fine knife. After singeing, black deposits and singed hairs are scraped off and the carcass is thoroughly cleaned before evisceration begins.
Evisceration and splitting
A sharp knife is used to make a mid-ventral incision from the pubic symphysis to the sternum. The distal end of the anus is tied with a rubber band or ligature to prevent intestinal contents from contaminating the carcass. Pelvic, abdominal, and thoracic organs are removed in sequence, with care taken not to puncture the viscera. Pigs are then suspended and split down the backbone in the same manner as cattle, but the head is generally left intact. The entire carcass is rinsed thoroughly with cold potable water before proceeding to postmortem inspection.
Postmortem examination: the final checkpoint
Regardless of species, every dressed carcass and its associated organs (offals) must undergo postmortem examination by a trained veterinarian or meat inspector before the meat can enter the food chain. Where signs of disease or damage are found, the entire carcass and offal may be condemned and must not enter the food chain – in less severe cases, only specific parts may be condemned. This inspection is the critical safeguard that connects proper dressing practices to public health protection.
Knife sterilization between animals, personal hygiene of abattoir workers, and the physical separation of dressing operations from offal cleaning areas are all equally important. Failure to sterilize knives and equipment regularly results in bacteria being transferred from hide to carcass and from carcass to carcass – a risk that applies across all species and all stages of dressing.

Why proper dressing matters beyond the abattoir
The entire dressing process is a food safety exercise as much as a technical one. Every incision, every organ removed, every litre of wash water applied either protects or risks the integrity of the carcass. Improper evisceration through accidental opening of stomachs and intestines can spread contamination across both internal and external surfaces of the carcass – contamination that chilling and further processing cannot fully undo. Equally, chilling meat post-mortem from 40ยฐC down to 0ยฐC and keeping it cold can give a shelf life of up to three weeks, provided high standards of hygiene were observed during slaughter and dressing.
For beef, achieving a deep muscle temperature of 6-7ยฐC within 28-36 hours is the standard benchmark. For pigs it is 12-16 hours, and for sheep 24-30 hours. These timelines only hold if the carcass was properly dressed, cleaned, and placed on chilling rails without touching floors, walls, or other carcasses.
