India’s livestock diversity goes far beyond cattle and buffalo. In the cold highlands of the Himalayas and the dense forests of the northeast, two remarkable bovines – the yak and the mithun – have sustained local communities for thousands of years. Neither occupies center stage in mainstream animal husbandry, yet both are indispensable to the people, cultures, and ecosystems of their respective regions. Understanding these non-conventional meat animals offers a window into sustainable, place-specific animal rearing that deserves far greater attention.

The yak: lifeline of the cold highlands

The domestic yak (Bos grunniens), popularly known as the “grunting ox,” is a bulky bovine built for one of the world’s most extreme environments. In India, yaks are reared by communities living between 3,000 and 5,000 meters above mean sea level, across states such as Jammu & Kashmir, Himachal Pradesh, Uttarakhand, Sikkim, Arunachal Pradesh, and West Bengal. Jammu & Kashmir alone holds about 71% of India’s total yak population, followed by Arunachal Pradesh and Sikkim.

Physical characteristics and adaptations

The yak’s lung capacity is nearly three times that of ordinary cattle, with smaller red blood cells that make it highly efficient at absorbing oxygen in low-pressure, high-altitude environments. Its body is well-armoured against the cold: a coat of long hair drapes over its sides like a curtain, sometimes reaching the ground, allowing it to graze and thrive in altitudes where most animals could not survive. Males typically weigh between 350 and 585 kg, while females are smaller at 225 to 255 kg, and both sexes carry a pronounced hump over the shoulders. The animals can endure freezing temperatures as low as -40ยฐC and tolerate the fodder scarcity that characterises high-altitude winters.

Yak as a meat animal

In traditional yak-keeping, male calves not retained for breeding are castrated between one and three years of age and raised for meat. Castrated yaks in the three-to-four-year age group yield the heaviest carcasses. Yak meat is tender, juicy, and free of marbling – a lean red meat with a protein content of about 20-22% and fat content that varies widely depending on the region, season, and feed. The low-fat profile makes it nutritionally attractive, and it can also be processed and exported as jerky – a preserved meat product that has found some traction in international markets.

Milk, fibre, and other products

Yak is truly a multi-use animal. Milk yield per lactation in indigenous yaks ranges from 250 to 500 kg over a lactation period of 260 to 300 days, with a fat percentage of around 10.9%. This rich milk is processed into butter, cheese (locally called chhurpi), curd, and the iconic butter tea consumed widely across Himalayan communities. Beyond food, coarse yak hair is used to make ropes, tents, and traditional handicrafts, while the fine yak down shed naturally in spring has gained international interest for its cashmere-like warmth and softness. Yak hide produces quality leather, and dung has historically served as fuel in regions where firewood is scarce.

Management system and cultural significance

Yaks are traditionally reared under a transhumance system – a seasonal migratory pattern that is primitive, unorganised, and physically demanding, yet it sustains the livelihoods of many nomadic communities in the Indian Himalayan region. Alpine pastures above 4,500 m are grazed during the summer months of June to September, while the herds descend to middle hill elevations in winter. The yak is deeply woven into the spiritual fabric of Himalayan life: according to Tibetan legend, the first yaks were domesticated by Guru Rinpoche, the founder of Tibetan Buddhism.

Declining population and conservation concerns

According to the 2019 livestock census, India has approximately 58,000 yaks – a drop of about 25% from the 2012 census. This decline is largely attributed to diminishing economic returns from yak-rearing, which discourages younger generations from continuing the practice. A key reason is that yak milk and meat remain outside mainstream commercial channels, limiting sales to local consumers. To arrest this decline, the Food Safety and Standards Authority of India (FSSAI) officially recognised the Himalayan yak as a food animal, a move expected to integrate yak products into the broader dairy and meat industry and improve the economic prospects of yak herders. The Indian government established the National Research Centre for Yak in 1989 under ICAR to improve husbandry services and address the scientific and practical challenges facing yak keepers.

The mithun: the cattle of the mountains

The mithun (Bos frontalis), often referred to as the “cattle of the mountains,” holds a position of honour across the northeastern states of Arunachal Pradesh, Nagaland, Manipur, and Mizoram. Beyond India, mithun populations are also found in Myanmar, Bhutan, Bangladesh, and parts of China. It is a large, semi-domesticated bovine that occupies a unique position – neither fully wild nor conventionally domesticated – and its relationship with the tribal communities of the region is ancient, complex, and deeply cultural.

Origin and domestication

The mithun is widely regarded as a domesticated derivative of the wild gaur (Bos gaurus), with domestication believed to have occurred approximately 8,000 years ago near the Assam-Burma border, particularly among the Adi tribes of Arunachal Pradesh. Three main hypotheses exist: direct domestication from gaur, hybridization between gaur and domestic cattle, and descent from a now-extinct wild bovine ancestor. A 2020 phylogenetic analysis using complete mitochondrial genome sequences unambiguously indicated that the gaur is the maternal ancestor of the domestic mithun. In India, mithun populations are divided into four regional strains based on geography and morphology: Arunachalee, Nagami, Manipuri, and Mizoram.

Physical characteristics

Mithun is a majestic ruminant inhabiting hilly forests at altitudes of 1,000 to 3,000 metres. It is a large herbivore capable of browsing efficiently on steep slopes and does not require pasture land like other bovine species. Mithun is characterised by a big head, heavy body, strong legs, and a broad, concave forehead. The hump is absent – unlike domestic cattle – and black is the most common body colour, often with an ash-coloured forehead and white stockings on all four legs, which become visible after four months of age.

Semi-wild rearing system

Farmers rear mithuns in forests under a free-grazing system where the animals eat a variety of grasses, tree leaves, and young plants. No supplementary feed or fodder is provided; the only human input is occasional salt, which the animals readily lick and which helps maintain their bond with their owners and caregivers. The care of mithuns in the forest is entrusted to a group of three to five capable young individuals known as “Mithun Men,” chosen by the local Mithun Farmers Association. This near-zero-input system makes mithun farming economically accessible for tribal households, though it also leaves animals exposed to diseases and, in some areas, predation.

Mithun as a meat animal

In India, mithun meat is considered more tender and superior to the meat of most other livestock species. The dressing percentage varies from 48 to 54% across age groups, and slaughter at four to five years of age yields the best results. Mithun is an efficient converter of forest biomass into high-quality organic meat, and its meat is low in fat, making it a healthy option. Traditionally, mithun was slaughtered only during important social and religious ceremonies. The FSSAI has officially recognised mithun as a food animal, paving the way for its commercial use and offering a significant economic boost to the region. Diversified mithun meat products – including vacuum-packed dry meat, pickles, soups, wafers, and instant biryani – are now being developed to widen market reach beyond the northeast.

Milk and other uses

Mithun produces around 1 to 1.5 kg of milk per day. Though the quantity is modest, mithun milk is nutritionally superior to cow milk, containing 8 to 13% fat, 18 to 24% solid-not-fat, and 5 to 7% protein. The ICAR National Research Centre on Mithun has successfully standardised the preparation of paneer, barfi, rasgulla, curd, and lassi from mithun milk, highlighting its potential as a value-added dairy source. Beyond food, mithun hide is of superior quality compared to conventional cowhide, and the animal has also been explored for draught use in hilly terrain.

Cultural and economic significance

In Northeast India, the mithun is a symbol of pride and prestige. The wealth of a family is measured by the number of mithuns they own, and among several Arunachal Pradesh communities, mithun is given as part of the bride’s dowry. Mithun sacrifice is central to almost every major ethnic festival, with the act believed to appease deities and bring prosperity to the community. Mithun is also regarded as a last resort during financial adversity – tribal farmers sell it to raise money for children’s education, health emergencies, or marriages. The Nagami mithun from Nagaland holds the distinction of being the world’s first officially recognised breed of mithun, registered by ICAR.

Yak and mithun: complementary pillars of highland food security

While the yak dominates the cold, oxygen-thin heights of the Himalayas and the mithun thrives in the lush forest belts of the northeast, both animals share a common thread: they are highly adapted to environments where conventional livestock cannot survive, and they serve as the economic and cultural bedrock of the communities that rear them. The global mithun population has grown to over 300,000 in India alone – where nearly 97% of the world’s mithun reside – while yak numbers continue to decline. Both species face mounting pressures from deforestation, climate change, and the pull of younger generations away from traditional pastoral livelihoods.

Institutional support is gradually catching up. ICAR operates dedicated research centres for both species – the National Research Centre for Yak in Dirang, Arunachal Pradesh, and the National Research Centre on Mithun in Medziphema, Nagaland – working on breed characterisation, nutrition, cryopreservation of germplasm, and the development of value-added products. FSSAI’s recognition of both yak and mithun as food animals is a significant policy step that can mainstream their produce into commercial markets, improving returns for farmers and creating incentives for conservation.

For students of animal science, these two species illustrate a fundamental principle: sustainable livestock systems are often built around native breeds that are perfectly matched to their environment, requiring minimal external inputs and delivering multiple products that support both nutrition and livelihoods. The challenge – and the opportunity – lies in scaling this knowledge without eroding the cultural and ecological systems that have sustained these animals for millennia.
