Food grains, pulses, and oilseeds form the very foundation of India’s food system. They are what most Indian households depend on – day in, day out – for energy, protein, and essential fats. But their importance doesn’t stop at the dinner table. These crops are deeply connected to the country’s economy, its rural employment, and even its trade balance with the rest of the world. Understanding their significance – and the challenges involved in getting them from the farm to your plate – is essential for anyone studying agriculture or food science.

Why food grains, pulses, and oilseeds matter so much
India is one of the world’s largest producers and consumers of food grains, pulses, and oilseeds. In the agricultural year 2024-25, the country achieved a record total foodgrain output of about 354 million tonnes, a roughly 6.5% jump over the previous year. Rice alone crossed 150 million tonnes, wheat reached nearly 118 million tonnes, and oilseed production surged past 42 million tonnes. These numbers are not just statistics – they represent food security for over 1.4 billion people.
Agriculture employs close to 46% of India’s workforce and remains the backbone of rural livelihoods, even as its direct share in GDP has settled around 16%. Food grains (rice, wheat, maize, millets), pulses (chickpea, pigeon pea, green gram, black gram), and oilseeds (soybean, groundnut, mustard, sunflower) together account for the bulk of the country’s cropped area and agricultural output.
Nutritional role in the daily diet
Every balanced Indian meal is built around these three crop groups. Each one fills a distinct nutritional gap, and together they provide a near-complete diet for millions – especially those who follow vegetarian diets.
Food grains: the energy base
Cereals like rice, wheat, maize, and millets are the primary source of carbohydrates and calories for the Indian population. They also supply B-vitamins, dietary fibre, and some minerals like iron and zinc. Whole grains, in particular, contain more fibre and micronutrients compared to their refined counterparts. A large share of the world’s dietary protein – roughly 47% – also comes from cereal grains, though they tend to be low in the amino acid lysine.
Pulses: the protein powerhouse
Pulses – including lentils, chickpeas, pigeon peas, and various beans – are often called the “poor man’s meat” for good reason. They contain 20-25% protein by weight, along with significant amounts of dietary fibre, iron, folate, magnesium, potassium, and zinc. For a country where a large portion of the population is vegetarian, pulses are indispensable.
Pulses are also rich in lysine, which is the amino acid that cereals lack. This is exactly why the classic Indian combination of dal (lentils) and rice works so well nutritionally – the two complement each other’s amino acid profiles, creating a more complete protein. Additionally, pulses have a low glycaemic index, which helps in managing blood sugar and insulin levels, making them especially beneficial for people with diabetes.
Oilseeds: essential fats and more
Oilseeds such as groundnut, soybean, mustard, sunflower, and sesame are the main source of edible oils and fats in the Indian diet. Fats are essential for absorbing fat-soluble vitamins (A, D, E, K), supporting brain function, and providing concentrated energy. Beyond cooking oil, oilseeds also contribute protein – soybean meal, for example, contains around 44-48% protein and is widely used in both animal feed and human food products. The residual cake or meal left after oil extraction serves as a valuable protein-rich feed for livestock, connecting oilseed production to the broader agriculture and dairy economy.
Economic significance in India
The production of food grains, pulses, and oilseeds is central to India’s agrarian economy. India is the largest global producer and consumer of pulses, contributes nearly one-fourth of global rice production, and is the second-largest wheat producer after China. The country also produces about 38% of the world’s millet output.
Despite these impressive production figures, India still imports a significant quantity of edible oils and pulses to meet domestic demand. In fiscal year 2024, for instance, pulse imports surged by 84% year-on-year. This gap between production and demand is what drives policy initiatives like the National Mission on Edible Oils-Oilseeds (NMEO-Oilseeds), a seven-year programme with an outlay of ₹10,103 crore aimed at increasing oilseed production to nearly 70 million tonnes by 2030-31. The government has also launched the Self-Reliance in Pulses Mission (2025-2031) to cut import dependence and boost domestic pulse output.
The Economic Survey 2024-25 specifically called for a shift away from cereal overproduction toward pulses, edible oils, and higher-value crops to improve both farmer incomes and the country’s nutritional security. Minimum Support Price (MSP) procurement for pulses like tur, urad, chana, and moong has also been expanded to encourage farmers to grow these crops.
The role of food processing industries
Raw agricultural produce – whether it is paddy, whole pulses, or oilseeds – cannot be consumed directly in most cases. It needs to be processed: rice needs milling, pulses need dehusking and splitting, and oilseeds need crushing and refining. This is where food processing industries step in, acting as the critical link between agriculture and industry.
Linking farms to markets
Food processing adds value to raw produce by converting it into consumable or marketable products. This not only extends shelf life but also creates a chain of economic activity – from procurement and transportation to packaging and retail. The food processing sector in India strengthens food security, supports rural employment, and contributes to the country’s export earnings. The share of processed food exports in India’s total agricultural exports has risen from about 13.7% in 2014-15 to over 25% in 2022-23.
Employment and rural development
Setting up food processing units in rural areas creates jobs right where the raw materials are grown. This reduces migration to cities, uses local resources efficiently, and lifts rural economic standards. The food processing sector accounts for around 12% of employment in India’s organised manufacturing sector. Government schemes such as Mega Food Parks and the Pradhan Mantri Kisan Sampada Yojana (PMKSY) aim to create processing infrastructure that benefits both farmers and entrepreneurs in rural India.
Post-harvest losses: a critical challenge
One of the biggest obstacles to fully realising the economic and nutritional potential of these crops is post-harvest loss. Every year, a significant portion of what is harvested never reaches the consumer due to spoilage, pest damage, inadequate storage, and poor handling during transportation.
According to a NABCONS study (2022) commissioned by the Ministry of Food Processing Industries, post-harvest losses for cereals range from about 3.9% to 5.9%, for pulses from 5.7% to 6.7%, and for oilseeds from 2.9% to 7.5%. While these percentages may seem modest, applied to India’s massive production volumes, the absolute quantity of wasted food runs into millions of tonnes. Some estimates suggest that approximately 74 million tonnes of food is lost in India each year.
Why proper storage matters
Food grains, pulses, and oilseeds are susceptible to moisture, insects, rodents, and fungal contamination during storage. Without proper warehousing – including adequate ventilation, pest control, and moisture management – the quality and nutritional value of stored produce deteriorates rapidly. Oilseeds, for instance, can turn rancid if stored in humid conditions, while pulses can develop a hard-to-cook defect after prolonged storage in adverse environments, reducing both their palatability and nutritional quality.
Investing in modern storage infrastructure such as silos, cold storage units, and hermetic (airtight) storage bags is essential for minimising these losses. The government’s Agriculture Infrastructure Fund, which provides loans for building warehouses and cold storage, is one initiative aimed at addressing this gap.
Why processing reduces waste
Processing is one of the most effective ways to reduce post-harvest losses. Milling grains, splitting pulses, extracting oil, and packaging finished products all extend the usable life of raw produce. Techniques like drying, canning, dehydration, and vacuum packaging prevent microbial growth and slow down spoilage. Processing also converts perishable or semi-perishable raw materials into stable, shelf-ready products that can be transported over longer distances and stored for extended periods.
The need for a stronger farm-to-fork chain
India’s agricultural output is impressive, but the journey from the farm to the consumer still has gaps. The supply chain is fragmented, cold chain infrastructure is limited, and a large proportion of produce – especially in remote rural areas – still follows traditional, less efficient post-harvest practices.
Strengthening this chain requires a multi-pronged approach: better rural roads and transport, more processing units close to production areas, improved market linkages through platforms like e-NAM (National Agriculture Market), and stricter quality control from harvest to retail. Encouraging more private sector participation and public-private partnerships in food processing and storage infrastructure will also be crucial.
It is equally important to train farmers and rural workers in modern post-harvest handling techniques. Simple practices – like proper drying of grains before storage, using improved storage containers, and timely pest management – can significantly reduce losses without requiring heavy capital investment.
Looking ahead
India has made significant strides in boosting agricultural production, but the next frontier lies in what happens after the harvest. Reducing post-harvest losses, expanding food processing capacity, and improving supply chain efficiency are all essential for ensuring that the country’s food grains, pulses, and oilseeds actually reach the people who need them – in good quality and at affordable prices.
Policy directions like the Self-Reliance in Pulses Mission, the NMEO-Oilseeds programme, and the expansion of Mega Food Parks signal that the government recognises this challenge. But the real transformation will depend on sustained investment, farmer education, technological adoption, and collaboration between public and private stakeholders.
