Every cut of meat you see at a grocery store or restaurant has gone through a standardised evaluation process before it reaches you. In the United States, the USDA (United States Department of Agriculture) operates a voluntary grading system that evaluates carcasses on two separate but complementary tracks – quality grades and yield grades. Quality grades predict how good the meat will taste, while yield grades estimate how much usable lean meat a carcass will produce. Together, these two systems provide a standardised language for producers, retailers, restaurants, and consumers to communicate about meat value and eating satisfaction.

Why does the USDA grade meat?
The meat industry deals with an enormous range of variability. Two cattle raised in different conditions, fed different diets, and slaughtered at different ages will produce carcasses with very different characteristics. Without a common grading framework, every transaction – from feedlot to packing plant, packing plant to retailer, retailer to consumer – would require individual inspection and negotiation.
The USDA grading system solves this by sorting a highly variable population of carcasses into groups that share similar characteristics. According to the USDA, trained meat graders use both visual assessment and electronic instruments to evaluate carcasses based on officially developed grade standards. This grading is voluntary – packers must request and pay for the service. However, according to Mississippi State University Extension, more than 95 percent of beef cattle harvested in the U.S. now receive official USDA grades, reflecting how central the system has become to the modern meat trade.
It is important to note that USDA grading is separate from USDA inspection. Inspection, handled by the Food Safety Inspection Service (FSIS), is mandatory and ensures meat is safe and free from disease. Grading, on the other hand, evaluates quality and yield – it tells you how good the meat is, not just whether it is safe.
Understanding quality grades
Quality grades focus on palatability – the tenderness, juiciness, and flavour you experience when eating cooked meat. Two primary factors determine a carcass’s quality grade: maturity and marbling. The interplay between these two characteristics, as assessed in the ribeye muscle exposed between the 12th and 13th ribs, determines where a carcass falls on the quality scale.
Maturity and its role in grading
As animals age, their meat generally becomes tougher. The USDA accounts for this by evaluating the physiological maturity of a carcass, scored from A (youngest) through E (oldest). According to the Beef Cattle Research Council, these maturity groups correspond roughly to the following ages: A is 9-30 months, B is 30-42 months, C is 42-72 months, D is 72-96 months, and E is over 96 months.
Graders assess maturity by examining two types of evidence. First, they look at the skeletal system – specifically, the cartilage tips (called buttons) on the vertebral column. In young animals, these buttons are soft, pearly-white cartilage. As the animal ages, this cartilage gradually turns to hard, porous bone through a process called ossification. This ossification begins in the sacral (rump) vertebrae and progresses forward through the lumbar (loin) and thoracic (rib) regions. Second, graders evaluate the lean tissue itself. Younger animals have fine-textured, light pinkish-red meat, while older animals display coarser texture and darker colour.
Marbling: the fat within the muscle
Within any given maturity group, marbling – the visible flecks of intramuscular fat dispersed within the ribeye muscle – is the primary factor that determines quality grade. Higher levels of marbling are associated with greater tenderness, juiciness, and flavour. The USDA recognises nine degrees of marbling, ranging from abundant (highest) down through moderately abundant, slightly abundant, moderate, modest, small, slight, traces, and practically devoid (lowest).
The relationship between maturity and marbling determines the final quality grade. For example, a carcass in maturity group A with a “small” degree of marbling qualifies as USDA Choice. A carcass of the same maturity but with “slightly abundant” marbling reaches USDA Prime.
The eight beef quality grades
The USDA recognises eight quality grades for beef: Prime, Choice, Select, Standard, Commercial, Utility, Cutter, and Canner. The top four grades – Prime, Choice, Select, and Standard – are generally restricted to carcasses from young cattle (A or B maturity). The lower grades – Commercial, Utility, Cutter, and Canner – are typically assigned to carcasses from older animals (C, D, and E maturity).
Prime represents the highest eating quality, with abundant marbling. It is mostly sold to restaurants and high-end retailers. Choice is high quality with less marbling than Prime, and it is the most widely available premium grade in retail. Select is leaner and uniform in quality but may lack the juiciness and flavour of higher grades. Standard and Commercial grades are often sold as ungraded or store-brand meat. Utility, Cutter, and Canner grades are rarely sold as whole cuts – instead, they go into ground beef and processed products.
One important quality issue graders watch for is dark-cutting beef. These carcasses display a dark red to nearly black lean colour with a sticky texture. Dark cutting results from low glycogen levels at the time of slaughter, typically caused by stress or strenuous activity before harvest. Dark cutters face significant price discounts because consumers reject the unusual colour.
Understanding yield grades
While quality grades predict taste, yield grades predict the amount of saleable lean meat a carcass will produce. Yield grades are numbered 1 through 5, with Yield Grade 1 representing the highest proportion of retail cuts and Yield Grade 5 the lowest. This system is particularly important for packers, wholesalers, and retailers who need to know how much usable product they will get from a carcass.
The four factors in beef yield grading
Beef yield grades are determined by evaluating four carcass characteristics:
External fat thickness – measured at a specific point over the ribeye muscle at the 12th rib. This single measurement serves as a reliable indicator of overall carcass fatness. The grader may adjust it up or down to account for unusual fat distribution in other areas.
Ribeye area (REA) – the cross-sectional area of the longissimus dorsi muscle, measured in square inches at the 12th-13th rib interface. A larger ribeye relative to carcass weight indicates a more muscular, higher-yielding carcass. The typical range is 9 to 17 square inches.
Kidney, pelvic, and heart (KPH) fat – internal fat deposits expressed as a percentage of hot carcass weight. Most carcasses have 1% to 4% KPH fat. More internal fat means less lean meat yield.
Hot carcass weight (HCW) – the unchilled weight of the carcass after removal of hide, head, and internal organs. As carcass weight increases without a proportional increase in muscle, yield grade tends to worsen.
The official yield grade equation is: YG = 2.50 + (2.5 ร adjusted fat thickness, inches) + (0.20 ร KPH%) + (0.0038 ร HCW, pounds) – (0.32 ร ribeye area, square inches). In practice, at the speed of modern packing plants processing 300-400 carcasses per hour, graders often estimate these factors visually rather than measuring each one individually.
The quality-yield paradox
An interesting tension exists between quality and yield grades. Quality grading rewards fat – specifically intramuscular fat (marbling), which improves eating quality. Yield grading penalises fat – specifically external, seam, and body cavity fat, which reduces the proportion of saleable lean meat. As explained in a comprehensive National Research Council review, these two systems are not contradictory because fat is deposited in different anatomical locations in a specific sequence. An animal can have excellent intramuscular marbling without necessarily carrying excessive external fat, though the two do tend to be correlated.
For beef and pork, the USDA quality and yield grades are coupled – meaning neither grade can be assigned without the other. For lamb, however, the systems are uncoupled, allowing a lamb carcass to receive a quality grade, a yield grade, or both independently.
Lamb grading: similar principles, different details
Lamb grading follows the same general philosophy as beef grading but with criteria tailored to ovine carcasses. According to USDA’s Agricultural Marketing Service, there are four quality grades for lamb: Prime, Choice, Good, and Utility. For yearling mutton, the same four grades apply. For mutton (from older sheep), the grades are Choice, Good, Utility, and Cull.
Lamb quality grading considers three factors: maturity, lean quality (including flank fat streakings), and carcass conformation. Conformation refers to the overall muscling and shape of the carcass – how wide, thick, and full the legs, back, and shoulders are. Because most market lambs are slaughtered at a young age, maturity is generally less of a differentiating factor compared to beef.
Lamb yield grades also range from 1 to 5, but the determination is simpler than for beef. Adjusted fat thickness is the only factor used to calculate lamb yield grades. Kidney and pelvic fat must be removed from the carcass before yield grading. In practice, lamb yield grading has historically been uncommon because the industry did not rely on yield grades for pricing decisions, though this has been changing as the industry pays more attention to leanness.
Pork grading: a focus on leanness
Pork grading operates quite differently from beef and lamb. For barrow and gilt (young pig) carcasses, the USDA assigns numerical grades – U.S. No. 1, No. 2, No. 3, No. 4, and U.S. Utility. These grades are based primarily on the expected yield of the four lean cuts: ham, loin, picnic shoulder, and Boston butt.
The grading equation for pork is straightforward: USDA grade = (4 ร last rib backfat thickness in inches) – (1 ร muscle score). Muscle scores are rated as thin (1), average (2), or thick (3). A carcass with less than 1.0 inch of last-rib backfat and average muscling would grade U.S. No. 1 – the leanest and most desirable grade.
Before receiving a numerical grade, pork carcasses must first pass a quality assessment. Graders evaluate the colour, firmness, and marbling of the lean tissue. Acceptable pork should be grayish-pink to moderately dark red, at least slightly firm, and free from conditions like pale, soft, and exudative (PSE) meat, which results from pre-slaughter stress. If a carcass fails the quality check, it is graded U.S. Utility regardless of its fat thickness or muscling. The belly must also be thick enough to be suitable for bacon production.
It is worth noting that the practical use of USDA pork grades has declined significantly since the mid-1970s. According to the Federal Register, most hogs today are marketed on grid-based merit systems that use weight and leanness measurements rather than formal USDA grade stamps. The pork industry’s shift toward leaner genetics and consumer demand for consistent quality have driven this change.
Who benefits from meat grading?
The USDA grading system serves every link in the meat supply chain. Producers use grades as feedback on their production practices. A rancher who consistently produces cattle grading Choice or Prime knows their genetics, feeding programme, and management are working. Higher grades typically command premium prices, creating direct economic incentives for better production.
Packers and processors use grades to sort carcasses efficiently and market them to appropriate buyers. A Yield Grade 1 carcass goes to a buyer looking for maximum lean, while a Yield Grade 4 might be directed toward ground beef production.
Retailers use quality grades to segment their offerings for different customer preferences and price points. A specialty butcher might stock primarily Prime and upper Choice, while a budget supermarket focuses on Select.
Restaurants rely heavily on grades for consistency. A steakhouse advertising USDA Prime knows its customers expect a specific level of marbling, tenderness, and flavour – the grading system guarantees it.
For consumers, quality grades are the most visible part of the system. When you see a USDA grade shield on a package of beef, you have an immediate, reliable indicator of what to expect from that meat in terms of eating quality.
Limitations and criticisms of the system
No grading system is perfect. One common criticism is that the USDA system places heavy emphasis on marbling, which some view as inconsistent with modern health-conscious preferences for leaner meat. The system also does not directly assess tenderness – a trait that consumers care about deeply – though marbling and maturity serve as indirect predictors.
Another issue is subjectivity. While graders undergo extensive training, visual assessment of marbling and maturity involves human judgment. Electronic grading instruments are increasingly being used alongside human graders to improve consistency, but the process remains partially subjective.
There is also growing interest in incorporating factors like animal welfare standards, sustainability practices, and nutritional profile into grading or labelling systems – none of which the current USDA grades address.
