Getting the most nutritional value from meat involves thoughtful choices at every stage – from selection to cooking to serving.
Choose vitamin-rich cuts wisely. If thiamin is a priority, opt for pork. For B12 and niacin, beef and lamb are strong choices. Including organ meats like liver in your diet – even once a week – can dramatically boost your intake of B12, folate, and vitamin A.
Opt for gentler cooking methods. Steaming, microwaving, and quick stir-frying preserve more B vitamins than boiling, prolonged roasting, or grilling. When you do boil or simmer meat, use the cooking liquid in soups or sauces to recover the nutrients that have leached out.
