Desi butter – commonly known as makkhan – is a staple in Indian kitchens that predates modern dairy processing by thousands of years. Made by hand churning fermented curd (dahi) or accumulated cream (malai), this traditional butter carries a distinctive tangy flavour and soft, creamy texture that factory-produced butter simply cannot match. Whether spread over warm rotis or melted into ghee for cooking, makkhan remains central to everyday Indian cuisine and holds deep cultural significance across the subcontinent.

What exactly is desi butter?

Desi butter is an unsalted, cultured butter prepared at home or in small-scale dairies from cow, buffalo, or mixed milk. The word “desi” translates roughly to “of the land” or “traditional,” and the product lives up to that meaning. Unlike commercial table butter – which typically contains around 80-82% milk fat along with added salt and regulated moisture – desi butter is produced without any additives, preservatives, or standardised processing. Its fat content can range from about 75% in cow-milk butter to 80-85% in buffalo-milk butter, depending on the source animal and how thoroughly the buttermilk is drained.

The key difference lies in the starting material. Commercial butter is churned from fresh, sweet cream. Desi butter, on the other hand, starts with fermented milk. This fermentation step – the conversion of milk into dahi – is what gives makkhan its characteristic tang and aroma. A review published in the Journal of Food Science and Technology notes that makkhan has been one of the most widely consumed dairy products in Indian village households since Vedic times, and the basic method of production has barely changed over millennia.

Raw materials: milk types and their impact

Desi butter can be made from the milk of cows, buffaloes, or a blend of both. The choice of milk noticeably affects the final product.

Buffalo milk has a higher fat content (typically 6-7%) compared to cow milk (3.5-4.5%), so it yields more butter per litre. Buffalo-milk makkhan tends to be whiter in colour, richer in body, and slightly heavier in taste. It is the dominant choice in states like Punjab and Haryana where buffalo farming is widespread.

Cow milk produces a softer, lighter butter with a pale yellowish tint due to higher beta-carotene levels. In hilly regions and parts of southern India, cow-milk makkhan is more common. Some households mix both milks to balance yield, flavour, and texture.

Regardless of the milk source, freshness and quality matter. Milk that is stale, contaminated, or adulterated will produce dahi with off-flavours, and that will carry over directly into the butter.

Step-by-step process of making desi butter

Step 1: Boiling and cooling the milk

Fresh raw milk is first boiled in a heavy-bottomed vessel. Boiling serves two purposes – it kills harmful bacteria and causes a thick layer of cream (malai) to form on the surface as the milk cools. The boiled milk is then allowed to cool to room temperature before being refrigerated. Once chilled, the cream layer is carefully skimmed off using a perforated spoon (jhara) and stored in a clean, airtight container in the refrigerator or freezer.

This cream-collection step is repeated daily over several days – often one to two weeks – until enough malai has accumulated. The exact quantity varies by household; generally, one litre of full-fat milk yields a thin layer of malai, so it takes consistent daily collection to gather enough for churning.

Step 2: Preparing dahi (curd) through fermentation

The most common route to desi butter involves converting whole milk into dahi first, rather than collecting malai separately. A small amount of previously set dahi or buttermilk (chhach) from a prior batch is added to lukewarm milk as a starter culture. This inoculated milk is left undisturbed at room temperature, typically between 30-40ยฐC, for 8 to 12 hours or overnight to set into firm curd.

According to dairy science research, the starter cultures used should be fresh – ideally not older than 24 hours – to avoid off-flavours and ensure consistent acidification. The lactic acid bacteria in the starter (primarily Lactococcus and Lactobacillus species) ferment the lactose in milk, producing lactic acid. This acidification is what gives the dahi its sour taste and creates the conditions that make it easier for fat to separate during churning.

Step 3: Churning the dahi or malai

Churning is the heart of the desi butter-making process. Traditionally, the set dahi (or accumulated malai) is placed in an earthen pot (matki) and churned using a wooden churner called a mathani or madhani. The mathani is a vertical wooden stick with a flat, pronged disc at its base. A rope is wound around the stick and pulled alternately from side to side, creating a back-and-forth rotation that agitates the curd.

This bidirectional churning – clockwise and then anticlockwise – is considered essential in traditional butter-making practice. The mechanical agitation breaks apart the fat globule membranes present in the fermented milk. As these membranes rupture, the freed fat globules start clumping together into small grains of butter.

During churning, water is gradually added in small amounts to help the fat grains separate more cleanly from the liquid buttermilk. Research indicates that the total volume of water added should be roughly equal to the volume of dahi being churned for optimal butter recovery. The water should be cool but not ice-cold when working with a traditional matki, though some households add ice cubes when using a modern blender or mixer.

The churning typically takes 15-30 minutes by hand. Experienced makers recognise when the butter is ready by the change in sound – the churning becomes less resistant – and by the appearance of visible pale-yellow or white butter grains floating in the thin, watery buttermilk.

Step 4: Collecting the butter

Once the butter grains have formed, they are gathered by hand or with a slotted spoon. The grains are pressed together gently into a lump and rinsed briefly with cold water to remove residual buttermilk. Removing as much buttermilk as possible is important because leftover protein and moisture accelerate spoilage.

The remaining liquid after butter extraction is chaach or chhach (traditional buttermilk), which is consumed as a refreshing drink or used in cooking. Nothing goes to waste in this process.

The science behind desi butter formation

While the process looks simple, there is solid food science at work. Milk is an oil-in-water emulsion – tiny fat globules are suspended in a water-based solution of proteins, lactose, and minerals. Each fat globule is surrounded by a thin protective membrane made of phospholipids and proteins. Under normal conditions, these membranes prevent the fat from clumping.

Fermentation weakens these membranes. The lactic acid produced during dahi formation lowers the pH, partially destabilising the fat globule membrane. When the dahi is then mechanically agitated during churning, the weakened membranes rupture. The freed fat, which contains a mix of solid (crystallised) and liquid fat at churning temperature, begins to aggregate. The solid fat crystals act as a structural scaffold, trapping liquid fat and small amounts of water to form butter grains.

Temperature plays a critical role. If the dahi is too warm, the fat will be mostly liquid and won’t clump properly – churning will take much longer or fail altogether. If it is too cold, the fat will be overly solid and hard to release from the curd matrix. The ideal churning temperature for desi butter ranges between 25-35ยฐC, depending on the season and the type of milk used. The Center for Dairy Research at the University of Wisconsin explains that the balance between crystallised and liquid milk fat is what ultimately determines the texture and spreadability of butter.

Traditional equipment used in desi butter making

The equipment for making desi butter is simple and has remained largely unchanged for centuries.

Matki (earthen pot): A wide-mouthed clay pot that keeps the dahi cool during churning. The porous nature of the clay allows slight evaporation, which helps maintain a lower temperature. Some households use stainless steel or brass vessels instead.

Mathani / Madhani (wooden churner): A hand-operated vertical stick with a flat disc or pronged head at the bottom. The churner is rotated using a rope wound around it. Different types of wood are used traditionally – neem, babool, teak (sagwan), peepal, and arjun wood are all common. Each wood type is believed to impart subtle flavour or health properties according to Ayurvedic tradition.

Rope (netra): A simple cotton or jute rope looped around the mathani stick, pulled alternately by hand to create the churning motion.

In modern households, the mathani is often replaced by an electric hand blender, food processor, or stand mixer. These tools dramatically reduce churning time from 20-30 minutes to about 5-10 minutes. However, traditionalists maintain that the slow, rhythmic hand-churning in a clay pot produces butter with superior taste and texture compared to high-speed mechanical churning.

Characteristics of desi butter

Freshly made desi butter has a soft, slightly grainy texture and a mildly sour, aromatic flavour that comes from the fermentation of the dahi. Its colour varies – buffalo-milk makkhan is pure white, while cow-milk makkhan has a faint yellow hue due to carotenoid pigments in the milk fat.

Unlike salted commercial butter, desi butter is completely unsalted. It contains no added colour, preservatives, or emulsifiers. This purity is both its appeal and its limitation.

Shelf life considerations

Fresh desi butter has a very short shelf life. At room temperature, it can last only about 2-3 days before developing off-flavours. Refrigerated, it may stay good for up to a week. The high moisture content and presence of residual milk proteins and lactose make it vulnerable to microbial spoilage and oxidative rancidity.

This is precisely why most Indian households convert their desi butter into ghee (clarified butter) within a day or two of making it. Heating the butter slowly drives off moisture, causes the milk solids to brown and settle, and leaves behind pure butterfat. Ghee prepared through this traditional dahi-makkhan route – sometimes called the indigenous or “desi” method of ghee making – has a distinctive nutty aroma that differs noticeably from ghee made by the direct cream method used in commercial dairies.

Regional variations across India

Although the basic principle is the same everywhere – ferment milk, churn, collect fat – regional practices vary significantly.

In Punjab and Haryana, buffalo milk dominates. Butter is churned early in the morning and often consumed fresh with makki di roti (cornmeal flatbread) in winter. The buttermilk is salted and seasoned as a drink called lassi or chhach.

In Rajasthan and Gujarat, households may collect malai over several days and churn it directly rather than making dahi first. The butter from this method is sometimes called “safed makkhan” (white butter) and tends to be milder in flavour.

In mountainous regions of Himachal Pradesh, Uttarakhand, and the Northeast, cow milk is the primary source, and the butter is lighter and more yellow. Yak-milk butter is also made in parts of Ladakh and Sikkim.

In South India, the practice of collecting cream from boiled milk over several days and then churning it is more common. The resulting butter is often immediately clarified into ghee, which is a primary cooking fat in states like Karnataka and Tamil Nadu.

Cultural and religious significance

Desi butter holds a place in Indian culture that goes beyond nutrition. In Hindu mythology, Lord Krishna is famously depicted as a child stealing makkhan from his mother Yashoda’s pot. This imagery has made butter-making a sacred act in many communities, and fresh makkhan is prepared as an offering during Janmashtami (Krishna’s birthday celebrations) across India.

In Ayurvedic tradition, fresh makkhan made from cow’s milk is considered cooling and nourishing for the body. It is sometimes applied externally as a moisturiser for the skin – a home beauty practice that many grandmothers still swear by.

Desi butter vs. commercial butter

The differences between desi butter and commercial butter go beyond just taste.

Starting material: Desi butter is made from fermented milk (dahi or cultured cream), while commercial butter is made from fresh, pasteurised sweet cream. This fermentation step gives desi butter its characteristic tanginess.

Processing method: Desi butter relies on manual or low-speed churning; commercial butter uses high-speed continuous buttermakers that process thousands of litres per hour.

Additives: Desi butter has none. Commercial butter may contain salt (1-3%), approved colouring agents like annatto, and flavour compounds like diacetyl.

Shelf life: Commercial butter, when properly salted and packaged, can last months under refrigeration and over a year when frozen. Desi butter lasts only a few days.

Fat recovery: Industrial methods achieve near-complete fat recovery. Traditional hand churning typically recovers less fat, with some remaining in the buttermilk – which is why desi chaach tastes richer than industrially produced buttermilk.

Modern adaptations of the traditional method

Urbanisation and changing lifestyles have pushed many families to adapt the desi butter process. Electric mixers and food processors have replaced the mathani in most city kitchens. Store-bought heavy cream or full-fat yoghurt is used in place of home-collected malai or freshly set dahi.

At a slightly larger scale, motorised versions of the traditional bilona churner are now available. These machines use a wooden mathani head powered by an electric motor that replicates the bidirectional clockwise-anticlockwise motion of hand churning. They are popular in gaushalas (cow shelters), small dairies, and commercial lassi shops across India.

Despite these adaptations, the fundamental process remains the same: ferment, churn, collect. And for many families, the tradition of making makkhan at home – even occasionally – is a way of staying connected to a food heritage that spans thousands of years.

Tips for making desi butter at home

If you want to try making makkhan in your own kitchen, here are a few practical pointers. Use full-fat milk – toned or skimmed milk will not yield enough cream. Ensure your dahi sets firmly by keeping the starter culture fresh and letting it incubate in a warm spot. When churning with a blender, add chilled water or ice cubes to help the fat grains separate more effectively. Churn on a medium speed; very high speed generates heat that can melt the butter back into the liquid. Once the butter clumps together, drain the buttermilk immediately and wash the butter with cold water two or three times until the water runs clear. Use the butter the same day or store it in the refrigerator and consume within three to four days. Better yet, convert it to ghee for long-term storage.
