What is ghee?
Ghee is a heat-clarified butterfat product prepared by heating butter or cream until virtually all the moisture and milk solids are removed. According to FSSAI regulations, ghee is defined as pure clarified fat derived solely from milk, curd, desi (cooking) butter, or cream, to which no colouring matter or preservative has been added. It can be produced from the milk of cows, buffaloes, sheep, or goats.
What makes ghee distinct from other clarified fats is its characteristic cooked flavour and grainy texture. During the heating process, the milk solids caramelise and settle at the bottom, which gives ghee its signature nutty, rich aroma. The final product typically has a golden-yellow colour when made from cow milk or a whitish tint with a greenish tinge when derived from buffalo milk.
According to the Codex Alimentarius standard (CODEX STAN 280-1973), ghee is a product exclusively obtained from milk, cream, or butter through processes that result in almost total removal of water and non-fat solids, with an especially developed flavour and physical structure. The minimum milk fat content prescribed for ghee is 99.6%.
What is butter oil?
Butter oil – also referred to as anhydrous milk fat (AMF) or anhydrous butter oil – is a dairy fat product derived exclusively from milk or milk products through processes that result in nearly complete removal of water and non-fat solids. As described by the American Dairy Products Institute, butter oil is obtained from sweet cream or butter where the fat content is increased to nearly 100% by removing water and solids-not-fat through physical separation processes.
Unlike ghee, butter oil has a bland or flat flavour and lacks the granular texture that ghee possesses. This is because butter oil is produced at lower temperatures (typically 50-80ยฐC), whereas ghee involves heating at 110-140ยฐC, which develops the characteristic cooked flavour. According to the Codex standard, anhydrous milk fat and anhydrous butter oil must contain a minimum of 99.8% milk fat, with maximum moisture content of just 0.1%.
Ghee vs. butter oil: key differences
While both ghee and butter oil are anhydrous forms of milk fat, several important differences separate them. Research published on ScienceDirect notes that the main distinction lies in flavour – butter oil has a bland taste, while ghee has a pleasing, cooked flavour. This difference arises from the production temperatures used: ghee is heated at higher temperatures that cause Maillard browning and caramelisation of milk solids, resulting in its distinctive aroma. Additionally, ghee retains more protein residue and has a granular physical structure, while butter oil is smooth and uniform. From a functional standpoint, butter oil is preferred for industrial recombination of dairy products, chocolate manufacturing, and ice cream production, while ghee is predominantly a culinary and cultural product.
Composition of ghee
Ghee is a complex lipid consisting primarily of triglycerides along with smaller quantities of free fatty acids, phospholipids, sterols, sterol esters, fat-soluble vitamins, carbonyls, hydrocarbons, and carotenoids (present only in cow milk ghee, which gives it the yellow colour). Milk fat in ghee contains at least 500 different fatty acids with carbon chain lengths ranging from 4 to 20 or more.
According to FSSAI’s amended standards, the quality parameters for ghee include an iodine value of 25-38, a saponification value of 205-235, maximum moisture of 0.5%, minimum milk fat of 99.5%, and the absence of ฮฒ-sitosterol. The butyro-refractometer (BR) reading for ghee ranges between 40.0 and 44.0, while the Reichert-Meissl (RM) value must be a minimum of 24. These parameters help identify genuine ghee and detect adulteration.
Nutritional profile
One tablespoon of ghee provides approximately 112 calories and 15 grams of fat, of which around 9 grams are saturated fat. Ghee is a rich source of fat-soluble vitamins A, D, E, and K. It also contains a significant amount of butyric acid, a short-chain fatty acid that supports gut health and acts as an energy source for intestinal cells. Additionally, ghee provides conjugated linoleic acid (CLA), which has been studied for its potential role in weight management and anti-inflammatory activity, as noted by WebMD.
Why is ghee so popular in India?
India is the world’s largest producer and consumer of ghee. An estimated 28-35% of the country’s total milk production goes into ghee manufacturing. Several factors contribute to its widespread popularity:
Established market and cultural heritage: Ghee has been used in India since Vedic times, dating back to approximately 3000-2000 B.C. It holds deep significance in Hindu religious rituals, where it is offered in sacred fire ceremonies (yagnas) and used to light lamps. This cultural rootedness has created a strong, established market for ghee across the country.
Simple technology and low cost: The manufacturing process for ghee is straightforward and does not require sophisticated equipment. It can be prepared at the household level using traditional methods such as the desi (indigenous) method, the creamery butter method, or the direct cream method. This simplicity keeps production costs low, making ghee accessible to both small-scale producers and large dairy plants.
Long shelf life without refrigeration: India is a tropical country with wide temperature variations across regions and seasons. Maintaining a cold chain for perishable products like milk and butter is expensive and difficult, especially in rural areas. By converting milk fat into ghee, which has very low moisture content, the product can be safely stored at room temperature for extended periods – often several months – without spoilage. This makes ghee an efficient way to preserve butterfat in regions where refrigeration infrastructure is limited.
Utilisation of surplus and sub-standard milk: Ghee production provides a practical solution for managing milk that is surplus to fluid consumption needs or that may not meet the quality standards required for direct sale as liquid milk. Converting such milk into ghee prevents wastage and creates a value-added product with commercial viability.
Health benefits of ghee
A comprehensive review published in the Journal of Ayurveda and Integrative Medicine analysed references to ghee across eleven major Ayurvedic texts spanning over 3,000 years. Of the 4,000 references to milk products curated, ghee had the highest number of mentions – 774 – grouped into 15 health benefit clusters.
Digestive health
In Ayurveda, ghee is considered one of the best substances for promoting healthy digestion. It is believed to stimulate the production of stomach acids and improve the body’s ability to absorb nutrients. The butyric acid in ghee supports intestinal health by nourishing the cells lining the digestive tract.
Anti-inflammatory properties
Ghee contains butyrate, a fatty acid with well-documented anti-inflammatory properties. This can help soothe inflammation within the body. In traditional Ayurvedic medicine, ghee has been applied topically for treating burns and swelling for centuries.
Cognitive function
The Ayurvedic review found that cognitive benefits were among the most frequently mentioned health claims for ghee in traditional texts. Ghee was historically recommended for improving memory, intelligence, and mental clarity. While modern scientific research on this aspect remains limited, these traditional associations are gaining attention as brain-related diseases become a growing public health concern.
High smoke point for cooking
Ghee has a smoke point of approximately 250ยฐC (482ยฐF), which is considerably higher than most cooking oils and standard butter. This makes it thermally stable for deep frying and high-heat cooking without breaking down into harmful free radicals, positioning it as a safer frying medium.
Lactose and casein considerations
Since the clarification process removes milk solids, ghee contains only trace amounts of lactose and casein. This makes it generally well-tolerated by individuals who are lactose intolerant or have mild dairy sensitivities, though those with severe milk allergies should still exercise caution.
Uses of butter oil in the food industry
Butter oil, particularly in its anhydrous form (AMF), is a versatile ingredient in the food processing sector. It is widely used in the recombination of dairy products – a process where water, AMF, and milk powder are blended to produce liquid milk, especially in regions where fresh milk supply is limited.
AMF is also a key ingredient in chocolate manufacturing, where it helps achieve the desired smoothness, texture, and cocoa butter compatibility. The ice cream industry uses AMF to provide a rich, creamy mouthfeel. In bakery applications, butter oil enhances the flavour and texture of croissants, pastries, and biscuits. It is also used in the production of dairy blends and low-fat spreads by combining milk fat with vegetable oils to create products with customised functional properties.
Its extended shelf life – it can be stored in nitrogen-flushed drums at 4ยฐC for several months – and convenient liquid handling make butter oil a practical choice for large-scale food manufacturing operations.
Ghee in traditional medicine and religious practices
Beyond the kitchen, ghee occupies a prominent position in Indian traditional medicine and spirituality. In Ayurveda, ghee is classified among the most sattvic (pure) foods, believed to promote positivity and consciousness. The ancient text Caraka Samhita lists ghee among the eleven food items recommended for daily consumption. Ayurveda also uses ghee as a carrier medium for herbal medicines – a concept known as anupana – because its lipid-soluble nature helps transport the active compounds of herbs to deeper tissues in the body.
Medicated ghee preparations, called ghritas, are formulated by cooking herbal decoctions or pastes in ghee. Examples include Brahmi Ghrita (for cognitive function), Triphala Ghrita (for eye health), and Ashwagandha Ghrita (for strength and vitality). These formulations remain widely used in Ayurvedic clinical practice.
In religious contexts, ghee is considered a sacred substance in Hindu traditions. It is used in havans and yagnas (fire rituals), offered to deities, and used to fuel temple lamps. The cultural and spiritual significance of ghee has contributed to its enduring demand across Indian society.
Quality standards and regulation
In India, the Food Safety and Standards Authority of India (FSSAI) prescribes detailed quality parameters for ghee. The product must be pure clarified milk fat with a natural, sweet, and pleasant odour. On melting, ghee should be clear, transparent, and free from sediment or foreign colouring matter. Tests like the Baudouin test (which must be negative) help detect adulteration with non-milk fats. The phenolphthalein test and phytosterol acetate test must also be negative to ensure purity.
Internationally, the Codex Alimentarius Commission sets the standards for ghee, butter oil, AMF, and related products under CODEX STAN 280-1973. These standards define minimum fat content, maximum moisture limits, and other quality criteria that facilitate international trade in these dairy fat products.
Practical considerations and moderation
Despite its many benefits, ghee is a calorie-dense food composed almost entirely of fat. Excessive consumption can contribute to weight gain and increased calorie intake. Health organisations generally recommend limiting saturated fat consumption to less than 10% of daily energy intake. Therefore, while ghee can be a wholesome part of a balanced diet, moderation remains key.
For butter oil, the primary concern in food manufacturing is maintaining quality by using high-grade raw materials. The flavour and oxidative stability of the final product depend directly on the quality of the cream or butter used in production. Proper packaging – typically in steel drums with nitrogen flushing – and appropriate storage conditions are essential for preserving its quality over time.
