Not all coffee is created equal. While billions of cups are consumed worldwide every day, only a small fraction of the global harvest earns the coveted title of “specialty coffee.” Only about 5-10% of the world’s total coffee production qualifies as specialty grade – and what separates it from ordinary coffee is far more than price or packaging. It comes down to measurable quality, where the bean is grown, how it is handled, and the distinctive experience it delivers in the cup. But how exactly is that quality defined, and who gets to decide? The answer varies slightly depending on who you ask – and that’s what makes this topic genuinely interesting.

The origin of the term “specialty coffee”

The phrase “specialty coffee” was first used in 1974 by Norwegian coffee pioneer Erna Knutsen in the US trade publication Tea & Coffee Trade Journal. She used it to describe beans of the best flavour, produced in special microclimates – a deceptively simple idea that would go on to reshape the global coffee industry. From that seed, the Specialty Coffee Association of America (SCAA) was founded in 1982, followed by the Specialty Coffee Association of Europe (SCAE) in 1998. In 2017, the two organizations merged to form the Specialty Coffee Association (SCA), the leading global authority on specialty coffee today.

What the Specialty Coffee Association (SCA) says

The SCA defines specialty coffee as a coffee or coffee experience that is recognized for its distinctive attributes, resulting in a significantly higher value in the marketplace. This updated definition moves beyond a single number – it takes a holistic view that encompasses sensory attributes, consistency, sustainability, and the impact on the people who produce and enjoy it.

The 80-point threshold

Historically, the most widely accepted benchmark for specialty coffee has been a score of 80 or above on a 100-point scale. Coffees scoring 90-100 are graded Outstanding, scores of 85-89.99 are rated Excellent, and scores of 80-84.99 are considered Very Good. These evaluations are conducted by certified Q Graders – professionals trained in sensory analysis who assess coffee through a standardized process called cupping. The SCA’s grading scale evaluates ten specific attributes including aroma, taste, aftertaste, acidity, body, balance, uniformity, sweetness, and overall cleanliness of the cup.

The defect standard

Physical quality is equally critical. On a 350g sample of green (unroasted) beans, specialty coffee must have zero primary defects and fewer than five secondary defects. Primary defects include things like fully black beans, sour beans, or significant insect damage – flaws that fundamentally compromise the cup. This rigorous physical inspection happens before roasting, meaning quality control begins at the source.

The Coffee Value Assessment (CVA)

Recognizing that a single score cannot fully capture a coffee’s worth, the SCA began updating its 2004 cupping system in 2020, developing the Coffee Value Assessment (CVA) – a modern, comprehensive framework that evaluates coffee through four separate lenses. These are: a Physical Assessment (bean size, moisture, defect count), a Descriptive Assessment (sensory attributes like aroma and flavor), an Affective Assessment (consumer preference and perception), and an Extrinsic Assessment (variety, processing method, origin, and sustainability). Together, they provide a far more complete picture of what makes a coffee valuable.

The role of origin: why growing conditions matter

Defining specialty coffee on paper is one thing; understanding why certain coffees achieve it is another. The cup quality of specialty coffee is deeply tied to where and how it is grown – a concept borrowed from the wine world known as terroir.

Altitude and flavor complexity

Altitude is among the most significant factors shaping a specialty coffee’s flavor. At high elevations – typically 1,500 meters and above – coffee grows under greater environmental stress, with thin air, cold nights, and slower metabolism. These conditions push beans to become denser and develop vibrant, complex, fruit-forward, and floral flavor profiles that are highly prized in specialty markets. The slower growth process at higher elevations produces a brighter acidity, often described as vibrant and complex, adding a lively, wine-like quality to the cup.

The contrast with lower-altitude coffee is stark. Coffee grown at lower elevations tends to have blander flavors and less depth, while high-altitude beans develop more complex sugars, leading to more potent tasting notes and more layered flavors. This is why a washed Ethiopian Yirgacheffe from above 2,000 metres can taste of jasmine and bergamot, while a low-altitude Robusta may taste flat and bitter.

Soil, climate, and terroir

Beyond altitude, soil composition plays a direct role in cup quality. Volcanic soils – found in regions like Guatemala, El Salvador, and parts of Indonesia – are rich in minerals like potassium, phosphorus, and magnesium, and beans grown in them often display pronounced sweetness, layered complexity, and heightened aromatics. Temperature, rainfall, and shade cover also interact with the plant throughout its growth cycle, influencing how the cherry develops and how sugars and acids accumulate in the bean. Research confirms that high-altitude terroir produces a more appreciated coffee – aromatic, slightly bitter, acidic, and with body – compared to low-altitude, high-rainfall environments, which yield coffee with more bitterness, grassy flavor, lower aroma, and increased astringency.

The Coffee Board of India’s perspective

India offers its own institutional framework for understanding specialty coffee. The Coffee Board of India defines specialty coffees as high-quality coffees that differ from normal coffee with reference to visual quality, cup quality, or both, and classifies them into five broad categories based on their unique features. These include monsooned coffees, peaberry coffees, organic and estate coffees, and coffees distinguished by geographic origin.

India’s specialty coffee identity is closely tied to specific growing regions and unique processing methods. Coffees from Coorg, Chikmagalur, and the Nilgiris carry distinct flavor signatures shaped by their respective microclimates, soil profiles, and elevation. Monsooned Malabar – where sun-dried beans are exposed to humid monsoon winds for several weeks – produces a uniquely low-acid, heavy-bodied cup that has no equivalent anywhere else in the world. The Coffee Board is now introducing new national certifications for producers, specifically designed to recognize and highlight India’s unique growing conditions, helping Indian coffee stand out and gain greater global recognition, according to Coffee Board CEO KG Jagadeesha.

India is currently the eighth-largest coffee producer globally, with Robusta accounting for 72% of total production, and over 70% of that production concentrated in Karnataka. While most Indian coffee has historically been exported as a commodity, the specialty segment is growing – driven by single-estate Arabica coffees from high-altitude farms gaining recognition both domestically and internationally.

What separates specialty from commodity coffee

The distinction between specialty and commodity (or commercial) coffee is not just about taste – it runs through the entire supply chain. Unlike commercial blends, which aim for consistency across large volumes, specialty coffee can vary noticeably from harvest to harvest, reflecting the environmental conditions of each year. This variability is not a flaw; it is part of what makes specialty coffee worth experiencing. Each lot tells a story about the season, the farm, and the hands that harvested it.

Specialty coffee requires strict adherence to quality at every stage – from growing at optimal altitudes and selective hand-picking at peak ripeness, to processing within hours of harvest, climate-controlled storage, and complete traceability from farm to roaster. Each step matters. A coffee that scores 85 points at origin can drop below specialty grade if it is mishandled, poorly stored, or stale by the time it reaches the roaster.

Traceability is another key differentiator. Specialty coffee must be traceable to a specific farm, cooperative, or processing station. This transparency benefits everyone in the chain – it allows buyers to verify quality claims, enables producers to receive premium prices, and gives consumers confidence in what they are drinking. The SCA’s updated framework emphasizes that specialty coffee represents a commitment to quality, fair trade, and ethical sourcing, creating economic opportunities for producers and strengthening connections across the entire value chain.

Why specialty coffee commands a premium

The premium price of specialty coffee is not arbitrary. It reflects the cumulative cost of quality at every point in the supply chain – the farmer who selects only ripe cherries by hand, the mill that processes within hours to prevent fermentation defects, the exporter who maintains proper storage conditions, and the roaster who applies careful roast profiles to a carefully sourced green bean. The specialty coffee market is on an upward trajectory, with its global value expected to reach $152.69 billion by 2030, driven by growing consumer preference for high-quality, traceable coffee and increasing emphasis on sustainability.

Prices can reach extraordinary levels for the most exceptional lots. As of 2025, the most expensive specialty coffee bean lot ever sold was a Panama Geisha, fetching over US$13,700 per pound at auction. While that extreme represents a tiny niche, it illustrates the ceiling of value that specialty coffee can command when every factor – terroir, variety, processing, and skill – aligns perfectly.

A living definition

What is most striking about specialty coffee’s definition is that it continues to evolve. The SCA’s shift from a single cupping score to the multidimensional Coffee Value Assessment reflects a growing recognition that quality in coffee is not a fixed number – it is a complex, context-dependent judgment. The Coffee Board of India’s push for new national certifications points in the same direction: quality definitions must be grounded in the specific conditions of where coffee is grown, not just applied uniformly from above. Across these different frameworks – from the SCA’s global standards to India’s region-specific classifications – the shared core remains consistent: specialty coffee is coffee that is distinctive, traceable, grown with care, and evaluated rigorously at every step from farm to cup.
