China is the birthplace of green tea, with a history stretching back more than 3,000 years. While modern machinery has brought efficiency to the factory floor, the Chinese method of green tea manufacture remains rooted in a logic that has barely changed: act fast, apply heat, handle gently, and sort carefully. The result is a tea that is celebrated globally for its fresh, complex flavors and striking appearance. Understanding each stage of this process – panning, rolling, drying, and sifting – reveals exactly why Chinese green teas are in a class of their own.

Why the Chinese method stands apart

Green tea’s defining characteristic is that it is an un-oxidised tea. The moment tea leaves are plucked from Camellia sinensis, naturally occurring enzymes begin reacting with oxygen in the air – a process that, if left unchecked, would turn the leaves brown and produce the deeper, maltier flavors of black tea. The Chinese method interrupts this process immediately and decisively, using dry heat as the primary tool. This is in contrast to the Japanese approach, which relies on steaming. Pan firing in woks or drums is classic for Chinese green teas and often adds a toasty, nutty note, whereas steaming preserves a more vegetal, seaweed-like flavor. This fundamental difference in fixation technique is what gives Chinese and Japanese green teas their distinctly different flavor identities.

Stage 1: Panning (sha qing) – stopping oxidation in its tracks

Panning, known in Chinese as sha qing (ๆฎบ้’) or “kill-green,” is the most critical stage in Chinese green tea manufacture. This process is accomplished by moderately heating tea leaves, deactivating their oxidative enzymes and removing unwanted scents, without damaging the flavor of the tea. In practice, fresh leaves are placed in large, shallow pans or woks and exposed to temperatures ranging from 250ยฐC to 300ยฐC. Workers or machines continuously stir and toss the leaves to ensure even heat distribution and prevent scorching.

The process typically lasts 3-5 minutes. During this short window, the leaves lose moisture rapidly, become soft and pliable, and develop a fresh, grassy fragrance – the signal that enzyme deactivation is complete. Small quantities of leaves are pressed to the bottom of pans heated with wood, coal, or electricity, and stirred constantly to prevent burning. Panning may also be mechanised, with leaves heated in rotating cylinders at least three times. It is this step that locks in the bright green color and establishes the characteristic nutty aroma that distinguishes Chinese green tea.

The biochemistry behind panning

Fixation has two main purposes: one suppressive, another expressive. Heat prevents the oxidation of polyphenols while also speeding up the breakdown of proteins and sugars that enhance sweet and refreshing flavors. This dual effect – preserving what is desirable while eliminating what is not – makes panning far more nuanced than simply “cooking” the leaves. The skill of the tea master lies in judging the exact moment to stop: too little heat leaves residual enzyme activity, while too much destroys the delicate aromatic compounds that define the tea’s final character.

Stage 2: Rolling – shaping and unlocking flavor

Once panning is complete, the warm, pliable leaves move immediately to the rolling stage. Unlike the aggressive rolling used in black tea manufacture, Chinese green tea rolling is designed to break down the tea leaves’ cell walls enough to allow some inner compounds to interact with the air, which increases flavor and aroma, while also allowing the leaves to be shaped. Rolling can be done by hand or mechanically, and the degree of pressure applied determines the final appearance of the tea.

Light rolling produces a strip shape, as seen in Huangshan Maofeng, while heavier rolling can form green tea into a ball shape, as with Biluochun. The rolling process also causes leaf juice and essential oils to surface slightly, which will influence flavor development in the drying stage that follows. This rolling action causes some of the sap, essential oils, and juices inside the leaves to emerge, further enhancing the taste of the tea. After rolling, the clumped leaves must be separated before moving to drying.

Rolling intensity and leaf style

The connection between rolling intensity and the finished tea’s style is direct and important. Tightly rolled teas, such as Gunpowder, are formed by compressing leaves into dense pellets that unfurl slowly during brewing, releasing flavor gradually. Young Hyson, for instance, consists of young leaves rolled long and thin. The entire aesthetic identity of a Chinese green tea – how it looks in the packet, how it opens in the cup – is determined at the rolling stage.

Stage 3: Drying – the longest and most defining stage

Drying is the most time-consuming stage of Chinese green tea manufacture and is arguably the one that contributes most to the tea’s final character. Drying, by gently applying heat, reduces the moisture content of the tea leaves to less than 5%, finalising the tea, locking in fragrance and flavor, and allowing the leaves to be stored at room temperature. Chinese green teas are dried to stabilise the aromas released during rolling and reduce any remaining moisture content to about 2-4%, eliminating the risk of mold.

Cylindrical rotary driers

Cylindrical rotary driers are large, rotating drums that tumble the tea leaves while applying controlled, gentle heat. The continuous rotation prevents leaves from clumping together and ensures uniform moisture removal. The rotation speed, temperature, and airflow are all carefully managed across multiple drying phases, with temperatures typically decreasing progressively as the leaves dry out. Great care must be taken to not over-cook the leaves, as the drying of tea is responsible for many new flavor compounds that are particularly important in green teas.

Ball tea driers

Ball tea driers use heated spherical or enclosed chambers where tea leaves are continuously agitated. This constant movement promotes even moisture removal and prevents hot spots that could scorch the leaf surface. The result of this prolonged, carefully staged drying process is a tea whose aromatic compounds are fully developed and stabilised – the nutty, floral, or grassy notes that define its market appeal are essentially “fixed” at this stage. The drying process, taken together, is what imparts the most characteristic style to Chinese green tea and is what sets different production batches apart in terms of quality.

Stage 4: Sifting – grading for the market

The final stage, sifting, is where the finished tea is sorted into market-ready grades. This is done either by hand or by passing the leaves through sifters with graduated mesh sizes to separate them, after which the resulting piles are classified according to size, type, and appearance. In the Chinese method, this step separates whole intact leaves from smaller, more broken pieces and dust, with each size category representing a distinct grade.

Hyson and Mongra: the key grades

Two of the most recognised grades produced through this sifting process are Hyson and Mongra. Hyson, or “Lucky Dragon Tea,” is a Chinese green tea from Anhui province, made from young leaves that are thinly rolled to have a long, twisted appearance that unfurls when brewed. It is graded into sub-categories including Mi Si, Cheng Si, and Fu Si. Young Hyson is considered high quality – harvested earlier, before the rains, it has a full-bodied, pungent taste and golden color.

Mongra, on the other hand, includes smaller, more twisted leaves that maintain good quality but are targeted at different market segments, often valued for their stronger, more concentrated brew. Common grades in the Chinese system include Gunpowder, Imperial, Young Hyson, Hyson, Twankay, Hyson Skin, and Dust, with sub-grades and quality rankings such as extra, first, second, and third added on top.

What sifting reveals about quality

Beyond simply sorting by size, the sifting stage allows for a visual quality assessment. Skilled sorters examine the tea for uniformity of color, consistency of shape, and the absence of foreign matter or defective leaves. Once rolled, the green tea leaves are classified according to their size, quality, and flavor, with stems and impurities removed. Grades that command the highest prices are those where whole leaves have maintained their shape through every prior stage – a testament to the precision required at every step of the process.

How the four stages work together

The manufacturing process used to produce green tea generally includes spreading, enzymic inactivation, rolling or shaping, and drying, and previous research has demonstrated that this process can exert significant influence on the metabolite profiles and sensory qualities of the final product. Each of the four stages of the Chinese method is interdependent. Panning that is too brief will result in residual oxidation that no amount of careful drying can correct. Rolling that is too aggressive will destroy the leaf structure and produce a harsh, astringent brew. Inadequate drying leads to mold and loss of aroma. And poor sifting means inconsistent quality reaching the consumer. The mastery of Chinese green tea manufacture lies in balancing all four stages with precision and timing.

The combination of high-temperature panning, light rolling, multi-stage drying, and careful grading produces teas with bright, clear liquors, fresh and nuanced flavors, and a visual elegance that has made Chinese green teas – from Longjing and Biluochun to Gunpowder and Hyson – among the most sought-after teas in the world.
