This is minimal processing (MP) at work – and it’s quietly transforming the way food moves from farm to fork. Minimally processed fruits and vegetables (MPFV) are physically altered from their natural state through operations like washing, peeling, slicing, or shredding, yet they retain a distinctly fresh-like quality. As consumer lifestyles grow faster and health consciousness rises, minimal processing has emerged as one of the most rapidly expanding sectors in the global food industry – and for good reason.
