Paneer and chhana are two of the most widely consumed fresh dairy products in India. Both are made through heat and acid coagulation of milk, and both share a common challenge – they spoil fast. With high moisture content and near-neutral pH, these products offer the perfect environment for microbial growth. That means once they’re manufactured, how you package and store them makes all the difference between a fresh, flavourful product and one headed for the bin.

Why paneer and chhana spoil quickly
Paneer typically contains 53-55% moisture and has a pH range of 5.4 to 5.9, which makes it highly susceptible to microbial attack. Under these conditions, spoilage bacteria – especially gram-negative psychrotrophic organisms like Pseudomonas and Aeromonas – can establish themselves rapidly on the product surface. This leads to the formation of a greenish-yellow slimy layer and off-odours, starting from the surface even while the interior may still be acceptable.
Without any preservation intervention, paneer lasts only about 1-2 days at room temperature and 5-6 days under refrigeration. Chhana is even more vulnerable. At ambient temperatures, its quality can deteriorate within a day or two. The shelf life of chhana at 4ยฐC, 22ยฐC, and 37ยฐC is approximately 10-12 days, 3-4 days, and 2-3 days, respectively.
The heat treatment applied to milk during manufacturing is sufficient to kill most pathogens. However, contamination during and after production – especially during the cooling and pressing stages – reintroduces microorganisms. The water used for cooling paneer blocks after pressing is a significant source of this post-production contamination.
Packaging materials for paneer and chhana
Choosing the right packaging material is the first step toward preserving freshness. Not all materials provide the same level of protection against moisture loss, oxygen exposure, and microbial contamination. Here are the most commonly used options.
Traditional packaging materials
Wax-coated parchment paper has been used for generations to wrap paneer. The wax provides a basic moisture barrier and gives the product a rustic look. However, parchment paper is porous and allows some air exchange, making it suitable only for short-term storage of about 2-3 days under refrigeration.
Vegetable parchment is similarly used for chhana. Chhana wrapped in plain butter paper remains acceptable for only about 4 days at refrigerated temperatures, while the same product packed in PVC film can stay acceptable for up to 12 days.
Polyethylene (PE) pouches are widely used for both products due to their cost-effectiveness and better moisture protection compared to paper-based wraps. PE pouches can keep paneer fresh for approximately 7 days at 5ยฐC.
Advanced packaging materials
Laminated pouches that combine materials like aluminium foil, LDPE, and poster paper offer excellent barrier properties against light, oxygen, and moisture. For chhana, aluminium foil packaging has been shown to maintain acceptability for up to 12 days under refrigeration – three times longer than butter paper.
Shrink films and saran films are another effective option, particularly the Cryovac system, which uses heat-shrinkable films to create a tight fit around paneer blocks. These films significantly reduce oxidation and moisture loss.
Polypropylene films offer strong puncture resistance and can be engineered with specific barrier properties. Some advanced polypropylene films even contain antimicrobial additives that actively inhibit bacterial growth on the packaging surface.
Modern packaging techniques
Beyond choosing the right material, the technique used for packaging has a major impact on shelf life. Several advanced methods have been developed specifically for perishable dairy products like paneer and chhana.
Vacuum packaging
Vacuum packaging removes air from inside the package, significantly reducing the oxygen available for microbial growth and oxidation reactions. Paneer vacuum-packed in laminated pouches can achieve a shelf life of about 30 days at 6ยฐC. An added benefit is that vacuum-sealed paneer develops a more compact body and better sliceability. When combined with mild heat treatment (90ยฐC for one minute), vacuum-packed paneer can last up to 90 days under refrigeration.
Modified atmosphere packaging (MAP)
MAP involves replacing the air inside the package with a controlled mixture of gases – typically carbon dioxide and nitrogen. This approach slows microbial activity while maintaining the product’s soft texture and shape. Research published in the Journal of Food Science and Technology found that paneer prepared using hurdle technology and then packed under MAP (COโ:Nโ = 50:50) achieved a shelf life of up to 12 days at room temperature and 20 days under refrigeration – a major improvement over untreated paneer.
MAP is particularly useful for paneer meant for retail distribution. The rigid food-grade trays sealed with high-barrier film protect the product from physical damage during transport without compressing it, which helps retain its original shape and moisture balance.
Edible coatings
Edible coatings are thin protective layers made from natural materials like whey protein, chitosan, starch, or alginate. These coatings are applied to the product surface by dipping or spraying and act as barriers against moisture loss and microbial contamination. According to research reviewed in the Asian Journal of Dairy and Food Research, edible-coated paneer samples can remain acceptable for up to 40 days. This method is gaining interest as an eco-friendly alternative to synthetic packaging.
Storage conditions for paneer
Even the best packaging cannot compensate for improper storage. Temperature control is the single most critical factor in preserving paneer and chhana.
Refrigerated storage
Paneer and chhana should be stored at temperatures between 2ยฐC and 5ยฐC immediately after packaging. One common problem is that many producers fail to bring the temperature of paneer down below 10ยฐC before packaging – the product often stays in the 20-30ยฐC range at the time it enters the package. If such warm paneer is placed into a refrigerator, it takes too long to cool down, and microorganisms get fully established during that lag period.
Using pasteurized chilled water for the post-press cooling step is essential. Rapid chilling of paneer blocks immediately after manufacture significantly reduces microbial load and extends freshness.
Frozen storage
For long-term preservation, freezing is a viable option. Blast-frozen paneer stored below -18ยฐC can remain in good quality for over a year. The paneer is typically cut into small pieces (approximately 1.5 cm cubes) and blast-frozen at temperatures below -20ยฐC. However, freezing does come with a trade-off – the texture of paneer tends to become crumbly and fluffy after thawing. To partially restore softness, thawed paneer can be soaked in warm water for 10-15 minutes before use.
Chhana is also amenable to frozen storage, though like paneer, its texture can be affected. For best results, it should be tightly sealed in moisture-barrier packaging before freezing to prevent freezer burn.
Brining
Paneer immersed in a 5% brine (salt) solution can last for about 20 days at 8-10ยฐC, compared to roughly 6 days for unbrined paneer. Since paneer is often salted and spiced before consumption anyway, brining at the storage stage serves a dual purpose – it extends shelf life and pre-seasons the product.
Storage conditions for chhana
Chhana’s shelf life depends heavily on its moisture content, the packaging material used, and the storage temperature. When packed in tin cans or cellulose film/LDPE, chhana can last up to 20 days at 4-5ยฐC. At 37ยฐC, even with these packaging materials, acceptability drops to only about 3 days.
Preservatives such as sodium benzoate and sodium propionate have been shown to extend chhana’s refrigerated shelf life. Adding sugar also helps, as it lowers the water activity and makes the environment less favourable for microbial growth.
For chhana-based sweets like sandesh and rasogulla, packaging and storage requirements vary based on moisture content and processing method. Rasogulla, for example, is packed in lacquered tin cans with hot sugar syrup and sodium metabisulphite (to maintain colour), and can last for over three months.
Key practices during packaging and storage
Several operational practices can make a significant difference to the final quality of stored paneer and chhana, regardless of the specific packaging method used.
Hygiene and speed
All surfaces, equipment, and hands that come into contact with paneer or chhana must be thoroughly cleaned and sanitized. The gap between removing the product from its manufacturing environment and completing the packaging process should be kept as short as possible. Any delay increases the risk of contamination.
Airtight sealing
Whether using vacuum pouches, MAP trays, or simple PE bags, a proper seal is non-negotiable. Weak or incomplete seals allow contaminants and air to enter, which accelerates spoilage. Regular testing and calibration of sealing equipment helps maintain consistency.
Proper labelling
Packages should carry clear information including manufacturing date, expiry date, storage instructions, and batch number. This is essential not just for FSSAI compliance but also for helping consumers handle the product correctly at home.
First in, first out (FIFO)
In both manufacturing units and retail settings, older stock should always be used or sold before newer batches. Organizing storage to allow easy access to older products and regularly rotating stock reduces the chance of products expiring unsold.
Consistent temperature maintenance
Frequent temperature fluctuations – even brief ones – can accelerate spoilage. Cold storage units should maintain a consistent temperature, and door openings should be minimized. Having backup power arrangements for refrigeration is also important, particularly in regions prone to electricity outages.
Emerging approaches in shelf-life extension
Research continues to explore new ways of keeping paneer and chhana fresh for longer. Supercritical COโ treatment combined with food-grade acids has shown the ability to extend paneer’s shelf life to 30 days while maintaining acceptable texture and flavour – without any chemical preservatives. This kind of non-thermal, clean-label processing is attractive to health-conscious consumers who prefer additive-free products.
Natural spice additives like ginger, cardamom, clove, and cinnamon have also been studied. When added to milk at the coagulation stage, these spices impart antimicrobial properties to the finished paneer. In combination with brine treatment and polyethylene packaging, spice-treated paneer has shown shelf life of 32 to 40 days under refrigeration.
UV-C light treatment is another promising non-thermal technique being explored for surface decontamination of paneer after production, which could effectively reduce microbial loads without altering the product’s flavour or nutritional profile.
Paneer vs. chhana: a quick storage comparison
While both products are acid-coagulated, they differ in texture, moisture, and how they respond to storage. Paneer is pressed and has a firmer body, making it more suitable for vacuum packaging and MAP. Chhana, with its softer and more granular texture, requires gentler packaging – materials like PVC film and aluminium foil wraps work well without damaging the product. Paneer tolerates freezing better than chhana in terms of appearance, though both suffer from texture changes upon thawing. For short-term storage, refrigeration at 4-5ยฐC remains the most practical and widely used method for both products.
