Walk into any supermarket freezer aisle and you’ll find shelf after shelf of coated food products – crispy chicken nuggets, golden fish fillets, lightly battered shrimp, and panko-crusted cutlets. What most consumers don’t see is the highly engineered production machinery behind every one of these products. The type of processing line used determines everything: the thickness of the coating, the texture of the crust, the oil uptake after frying, and ultimately the eating experience. There are four main types of processing lines for coated foods – single line, tandem line, tempura or batter-fry line, and tempura-Japanese line – and each is purpose-built for a specific coating application.

What is a coated food processing line?
A coated food processing line is an automated, conveyor-based production system where raw food substrates – poultry, seafood, vegetables, or formed protein products – travel through a series of stations, each applying a specific layer of coating. The line may include pre-dusting machines, batter applicators, breading machines, fryers, and finishing equipment such as de-oilers or IQF (individually quick frozen) freezers. This setup is well-suited for producers manufacturing a focused range of products, such as breaded fish fillets or chicken nuggets with a standard Western-style coating.
The key advantage of a single line is its operational simplicity. It requires a smaller initial investment, less floor space, and is easier for operators to manage and maintain. However, its main limitation is flexibility – it is not easily reconfigured to accommodate fundamentally different coating systems or significantly increased production volumes. Tempura batter has a much lower viscosity than conventional coating batters, which means it cannot simply be applied via a standard waterfall curtain system. Instead, these lines use gentle dipping or total immersion systems that fully surround the product with batter without breaking the delicate batter structure. 4. Tempura-Japanese line

This line is designed to produce products with the delicate crunch and light texture that Japanese-style coating is globally known for.
Understanding why this line requires a dedicated configuration starts with understanding what panko is. Panko breadcrumbs are made from crustless white bread baked with an electric current, creating large, airy, flake-like slivers rather than dense, ground crumbs. This structure gives panko-coated products a significantly crispier, lighter crust compared to standard Western-style breadcrumbs. Panko also absorbs less oil during frying, which means the finished product has a lighter texture and less greasy mouthfeel – a key functional benefit in modern convenience food production.
In a tempura-Japanese line, the process typically runs as follows: the product first receives a pre-dust application, followed by a tempura-style batter dip using the same gentle immersion technology used in the standard batter-fry line. Because panko crumbs are much larger and more fragile than standard breadcrumbs, conventional breading machines – which use vigorous agitation and pressure – can break the flakes down and destroy their distinctive texture.
