Fish sausages may not dominate every supermarket shelf globally, but they are firmly established as a valued food product across Asia and are gaining growing interest worldwide. Made from fish mince blended with binding agents, seasonings, and other additives, fish sausages closely parallel conventional meat sausages in structure and function – yet stand apart in their nutritional identity. According to the Food and Agriculture Organization (FAO), the same bowl chopper and sausage-filling equipment used for meat sausages applies directly to fish sausage production, making it an accessible extension of existing processing infrastructure. Understanding how these products are formulated and processed reveals the precision that goes into every step.

What is a fish sausage?

A fish sausage is a moulded fish product made from minced fish flesh combined with non-meat ingredients to produce a cohesive, sliceable, and shelf-stable item. According to Meats and Sausages, a typical fish sausage composition contains approximately 67-68% water, 14-15% protein, 5-6% fat, and 8-9% starch. This makes it comparable to many conventional processed meat products, but with a leaner fat fraction. MasterClass notes that fish sausages can be coarsely or finely ground, and may include ingredients like pork fat, breadcrumbs, starch, and egg whites alongside the fish, depending on the intended texture and application.

Fish products and sausages are notably popular in countries such as the Philippines, Thailand, Malaysia, Japan, and China, where they have been a part of the food culture for decades. In Japan, the product known as gyoniku soseji is a convenience store staple, while in South Korea it became common in children’s packed lunches from the 1960s onward.

Selecting the right fish species

The choice of fish species is the most foundational decision in fish sausage production. The FAO recommends that all species of white fish, such as cod, haddock, pollock, whiting, and saithe, are suitable – especially for products requiring a mild flavor and attractive appearance. White-fleshed fish are preferred because they produce a product that does not taste strongly of fish and can be easily adjusted with dyes and flavorings.

Fatty fish like tuna, mackerel, salmon, and herring can also be used, either alone or blended with leaner species, to introduce flavor richness and omega-3 content. However, the FAO cautions that fatty fish products keep less well in cold storage than white fish-based ones, as the fat begins to oxidize sooner. For commercial production, in-fish content typically ranges from 60 to 80% of the final product weight, with fresh fillets, frozen blocks, or mechanically separated mince all being usable raw materials, provided they are handled hygienically.

Fish that has been soaked in fresh water before processing – a step sometimes called “bleaching” in fish technology – has blood, fat, and foreign material removed. According to Meats and Sausages, this soaking renders the meat white, removes undesirable color, taste, and odor, and importantly improves the binding properties of the flesh.

Key ingredients and their functional roles

Fish sausage is not simply ground fish stuffed into a casing. Each ingredient plays a defined functional role in determining the final product’s texture, flavor, color, and shelf life.

Salt

Salt is typically the first ingredient added during mixing, and its role extends well beyond seasoning. It activates the myofibrillar proteins – primarily actin and myosin – in the fish muscle, causing them to dissolve and form a sticky protein matrix. This protein exudate acts as the natural binder that holds all other ingredients together during cooking. Fish sausages typically contain about 2.5% salt in relation to the total meat weight.

Starch

Starch improves the binding of ingredients and contributes to the overall texture. Both wheat and potato starch are commonly used, with potato starch often preferred by sausage makers because its gel is more elastic. Many formulations include starch at 5-8% of total weight. Some producers also use rusk (dried breadcrumbs), which absorbs moisture and contributes to firmness.

Fat

Fat – typically pork fat or vegetable oil – improves mouthfeel, juiciness, and flavor. A basic formulation from Meats and Sausages uses oil as a substitute for pork fat, with the mixture stuffed into synthetic casings and cooked in water at 80ยฐC for 30 minutes. The proportion of fat in the formulation directly affects both the texture and the shelf life of the final product.

Seasonings and additives

Spices and seasonings are flexible and can be adjusted to suit regional preferences. Common additions include black pepper, coriander, garlic salt, cayenne pepper, and sugar. Polyphosphates are sometimes added in commercial production to improve water-holding capacity and binding. For those seeking a longer shelf life at home, adding 0.1% ascorbic acid (vitamin C) helps slow fat rancidity and extends the sausage’s usable shelf life without chemical preservatives.

The production process: step by step

Fish sausage production follows a structured sequence, with temperature control and hygiene being critical at every stage.

Step 1 – Mincing and mixing

Fish fillets are first minced or processed in a bowl chopper or food processor until the flesh reaches the desired consistency – either coarse or fine. As noted by food writer Hank Shaw, fish fat is far less saturated than pork fat, and to properly emulsify it, the mixture must be worked cold – practically near-frozen – to prevent the emulsion from breaking down. A common technique is to add crushed ice during processing to keep the temperature low. Step 2 – Stuffing into casings

The prepared fish mass is then loaded into a sausage stuffer and pushed into casings. Casings can be natural (sheep or pork intestine) or synthetic (cellulose or collagen). Synthetic casings are increasingly available and offer advantages in uniformity and hygiene. Casings must not be overfilled, as fish sausages are softer than meat-based products and are more prone to bursting during heat processing.

After stuffing, the sausage is twisted or tied off into links of the desired length. Any visible air pockets should be pricked with a sterilized needle to prevent bursting during cooking.

Step 3 – Heat processing

Heat processing is central to food safety and product stability. There are two main approaches: cooking in hot water, or smoking followed by a brief hot water immersion.

For a standard cooked sausage, the FAO’s slicing sausage recipe calls for heating in water at 80-90ยฐC for 2 hours, with the temperature carefully controlled to prevent the casings from bursting. For smaller home-scale production, cooking at 75ยฐC for approximately 25 minutes is sufficient to firm the sausage and improve its texture. After heat processing, sausages are immediately cooled in cold or iced water to stop cooking and tighten the casing.

Step 4 – Smoking (optional)

Smoking is used in some fish sausage variants to add flavor, color, and extended shelf life. The FAO’s smoked slicing sausage recipe involves hot smoking at 60ยฐC for 3.5 hours in a mechanical kiln, followed by a brief immersion in water at 90ยฐC for 2-3 minutes and then cooling in iced water. The result is a product that can be eaten without further cooking, though grilling for 5 minutes is recommended for best results.

Research published in PMC (National Center for Biotechnology Information) confirms that the smoking process can increase the protein concentration in a serving of fish by 18-27%, while simultaneously reducing fat content – a nutritional benefit in addition to the flavor enhancement smoking delivers.

Packaging, storage, and shelf life

Once processed and cooled, fish sausages are packaged – typically in cellophane, vacuum bags, or synthetic film – and stored under refrigeration. A scalded fish sausage stored in an airtight container can remain in good condition in the refrigerator for about one week. Smoked varieties kept chilled at 4ยฐC have a shelf life of 7 days, while frozen storage at minus 30ยฐC extends this to over 9 months for white fish products. Fatty fish sausages should not be stored frozen for more than 9 months, as fat oxidation can develop even at low temperatures.

For commercial products, vacuum packaging under modified atmosphere conditions significantly extends refrigerated shelf life. A study published in the journal Foods (MDPI) found that a properly processed fish sausage met all microbiological safety parameters and maintained acceptable sensory characteristics for 30 days under refrigerated storage.

Nutritional value of fish sausages

Fish sausages offer a nutritionally competitive alternative to conventional pork or beef sausages. They typically contain less saturated fat, and when fatty fish species or fish oil are included in the formulation, the product also becomes a useful source of omega-3 fatty acids (EPA and DHA), which are associated with cardiovascular and cognitive health benefits.

A general fish sausage formulation combining marlin, tuna, salmon, and pork fat yields a product with a balanced macronutrient profile. The exact protein content varies by the binder used: research from Ecuador showed that adding soybean flour achieved a protein level of 11.24%, compared to quinoa flour at 10.80%. These figures are comparable to many conventional processed sausage products and make fish sausage a viable protein source in diverse diets.

Fish sausages in Southeast Asian cuisine and beyond

Fish sausages have deep roots in Southeast and East Asian food traditions. Kamaboko (Japanese fish cake), Soondae (Korean-style sausage using pollock), and Jeon (Korean pan-fried fish sausage slices) all represent regional adaptations of the broader concept of processed fish in sausage form. These products are commercially produced at large scale and consumed across all age groups.

Beyond Asia, interest in fish sausages is growing in Western markets as well, driven by consumer demand for sustainable protein, lower-fat alternatives to red meat, and products suitable for pescatarian diets.
